Encapsulation of natural polyphenolic compoundsVaibhav Maurya
This document discusses encapsulation of natural polyphenolic compounds. It describes various encapsulation methods including spray drying, supercritical fluid techniques, physicochemical methods, and chemical methods. Spray drying is highlighted as the most widely used method for encapsulating polyphenols due to its low cost, flexibility, and ability to produce stable particles. Specific polyphenols that have been encapsulated using different techniques like spray drying, supercritical fluid processes, and complex coacervation are also outlined.
Encapsulation is a process of entrapping active ingredients within a coating material to improve their delivery and stability. Common techniques include spray drying, fluid bed coating, and melt extrusion. Spray drying involves atomizing a solution or dispersion of core material and coating agent and drying the droplets in a hot air stream. Fluid bed coating applies a coating onto particles suspended in an air stream. Melt extrusion mixes a molten carbohydrate coating with actives using screws before extruding and quenching the strands. These techniques produce particles ranging from nanometers to millimeters that can protect, deliver, and control the release of ingredients.
Manufacturing process of yogurt and dahiNajja Tariq
This document provides information about the manufacturing processes of yogurt and dahi. Yogurt is made by fermenting milk with Lactobacillus bulgaricus and Streptococcus thermophilus cultures, giving it a tart flavor. Dahi is similarly made by fermenting milk or cream but uses different starter cultures. Both products are high in protein and beneficial bacteria. The processing involves steps like standardizing, pasteurizing, homogenizing, cooling, inoculating with cultures, incubating, and packaging the fermented milk.
This document discusses polyphenols, which are antioxidants found in plants. It explains that polyphenols are found in foods like red wine, tea, berries, and olives. The document outlines several health benefits of polyphenols, including protective effects against cerebral infarction, inhibiting cholesterol, and preventing cancer. It also notes the historical use of polyphenols and recommends including polyphenol-rich foods in the diet.
Yogurt is produced through the controlled fermentation of milk by two bacteria, Lactobacillus bulgaricus and Lactotococcus thermophilus. These bacteria convert the milk's sugar (lactose) into lactic acid, which causes the characteristic yogurt curd to form. Their interaction also produces compounds like formic acid and carbon dioxide that stimulate further bacterial growth. The lactic acid produced causes the milk proteins to coagulate, thickening the yogurt. Additional flavors can be added to increase consumer popularity.
Fermented milk products, also known as cultured dairy foods, cultured dairy products, or cultured milk products, are dairy foods that have been fermented with lactic acid bacteria.
This particular presentation describes all the fermented milk products like yoghurt, cheese etc. VIEW, SHARE, ENJOY!
1) Fruitflow is a tomato-based ingredient that has been shown in clinical trials to reduce platelet aggregation and improve blood flow. It has received an EFSA health claim for maintaining healthy blood flow.
2) The heart health market is large as many consumers take medications or supplements for conditions like high cholesterol, blood pressure, and risk of blood clots and strokes. Fruitflow offers a new solution for heart health by specifically targeting blood circulation.
3) Fruitflow works by keeping blood platelets smooth and less prone to clotting inside blood vessels. It addresses platelet aggregation, one of the key factors in cardiovascular disease along with cholesterol and blood pressure.

A study found that 2,3-pentanedione (PD), an ingredient used to promote butter flavor in microwave popcorn, is a respiratory hazard that can also change gene expression in the brain. Researchers exposed rats to different concentrations of PD and found that 12-14 hours later, PD caused respiratory epithelial injury in the nose similar to diacetyl. PD exposure also caused cell death and apoptosis in the olfactory neuroepithelium and signs of neurotoxicity, including changes in expression of genes related to inflammation and growth in the brain.
The study tested whole wheat muffins with different amounts of added phytosterols (0mg, 400mg, and 800mg) to determine if phytosterols were an acceptable food additive for lowering cholesterol. Sensory testing found no significant difference between the muffins, while objective tests found the 800mg muffin had higher moisture and the control muffin was taller and required more force to penetrate. Both the sensory and objective results support phytosterols as an acceptable additive that could help reduce heart disease risk factors like high cholesterol.

This study examined the effects of consuming probiotic yogurt on serum cholesterol levels in 46 individuals with hypercholesterolemia in Shiraz, Iran. The participants were divided into two groups, with one group consuming 300g per day of probiotic yogurt containing Lactobacillus acidophilus and Bifidobacteria, and the other consuming regular yogurt, over two 6-week periods. Blood samples analyzed before and after each period found that consumption of probiotic yogurt significantly reduced LDL ("bad") cholesterol levels compared to regular yogurt. Additionally, probiotic yogurt reduced total cholesterol and increased HDL ("good") cholesterol, though not significantly. The results suggest that probiotic bacteria like L. acidophilus and Bifidobacteria can
This document summarizes a presentation on the leaching of Bisphenol A (BPA) from plastic containers and its association with hormone-dependent cancers. The presenter discusses their lab findings showing high levels of BPA in water samples from scratched or weathered plastic containers. They also discuss evidence that BPA is an endocrine disruptor and weak estrogen, and may be associated with increased risks of breast cancer, prostate cancer, and other hormone-dependent cancers due to its ability to interfere with hormone signaling pathways. The presenter emphasizes the need for further research on BPA's health effects and ways to reduce human exposure through alternatives to plastic food and water containers.
1) Many Americans face health challenges such as cancer, heart disease, and immune disorders which are increasing in prevalence.

This document discusses both ingredients that can harm health as well as those that can promote health. It begins by recognizing awards given to innovative and beneficial ingredients at an expo, such as vitamin K2 and algal flour. It then discusses how various regulations and events, like DSHEA, have shaped the supplements industry over time. Both harmful chemicals like sodium and beneficial compounds like vitamin C, K2, probiotics, and PQQ are mentioned. The document provides a balanced perspective on both health-killing and health-healing ingredients.

Polyphenolics has invested heavily in original research
at both the laboratory and clinical levels. Original
research is important because multiple factors, from
the grape varietals chosen, to the time of harvest, and
the extraction technique, can influence the profile of
the finished product. The only way to know if a
particular extract has biological efficacy is to test the
specific composition of the extract.
13. Mechanism of Action Study
How does MegaNatural®-BP Work?
Research using animal models indicates that it
activates the enzyme nitric oxide synthase (eNOS) to
produce nitric oxide (NO). NO is a gaseous compound
that acts as a cellular messenger. When NO is present
in the inner lining of the blood vessels, known as the
endothelium, it causes the surrounding smooth muscle
to relax. This endothelium-dependent relaxation of the
blood vessels then supports healthy blood flow.*

Results: Consumption of MegaNatural®-BP beverage for six weeks led to a significant
reduction in systolic BP compared to placebo beverage that returned to baseline after four
week discontinuation of GSE beverage. Similar findings were apparent for diastolic BP
showing 4.7% reduction in DBP that returned to baseline after discontinuation of GSE
beverage. Subjects with higher starting BP experienced greater BP reduction.

Results: Blood samples showed MegaNatural®-BP to be well absorbed after a single dose, with a steep rise in polyphenols 90 minutes after ingestion. At the end of four weeks, both dosages of MegaNatural®-BP were found to help maintain blood pressure levels (both systolic and diastolic) within the normal range.* In addition, both dosages decreased levels of oxidized
LDL cholesterol, with the 300 mg dosage reaching statistical significance compared to baseline. Low levels of oxidized LDL are correlated to arterial health.*
