Haggis is made from lamb’s offal (lungs, liver and
heart) mixed with suet, onions, herbs and
spices, all packed into a skin bag
traditionally, but not usually now, made of a
sheep’s stomach.


Haggis is often served with mashed potatoes and
 mashed swede or turnips. It is traditionally
 served on Burns’ Night.
BLACK BUN
A very rich fruit cake, made with raisins,
currants, finely-chopped peel, chopped
almonds and brown sugar with the
addition of cinnamon and ginger.
WALES
LAVERBREAD
It's basically boiled seaweed (Laver is a kind of
edible seaweed).

Laverbread is often served rolled with fine Welsh
oatmeal into little cakes and fried into crisp
patties with eggs, bacon and cockles for a
traditional Welsh breakfast.
ENGLAND
YORKSHIRE PUDDING
This dish is not usually eaten as a dessert like
other puddings but instead as part of the main
course or at a starter.


Yorkshire pudding, made from flour, eggs and
milk, is a sort of batter baked in the oven and
usually moistened with gravy.
ROAST MEATS
Typical meats for roasting are joints of
beef, pork, lamb or a whole chicken.
More rarely duck, goose, gammon,
turkey or game are eaten.

UP HELLY AA, LERWICK, SHETLAND
Largest fire festival in Europe, celebrated on the
last Tuesday of January every year. Torch-light
procession through the streets of Lerwick,
followed by the burning of a full-size replica
Viking longship.
