Victorian Era Cuisine

• The victorian era is often charecterised as
  a time when literature a social conduct
  went through a major change. A aspect
  people rarely look at though is the major
  changes in cuisine and the basic
  standards of food.
• At this time people standards of what was to
  be eaten was revamped. Their expectations
  of sanitation and freshness were changed
  which helped the over all populations life
  expectancy and prevented spread of disease
  which had plauged the previous eras. Though
  their standards were ok, they were still very
  dirty compared to our standards today.
• The popularization of the “tea hour”
  happened in this hour. This was because
  the portion of breakfast was often not
  enough to hold their hunger of until lunch
  so they made a time to eat and drink. This
  cause the rapid spread of tea houses.
• Towards the end of the era gas
  stoves were being installed in richer
  peoples houses. This allowed for
  controlled temperatures and more
  percise cooking for temperature
  sensetive recipies.
• There was a vast differences between
   what the rich and poor people ate.
The rich ate a large amount and threw
away even more. This was at a time when
a large proportion of the population were
living on dripping, rotten vegetables, tea,
and gruel (which is basicly oatmeal/grits
but mainly water. It was nasty).
• Contrary to common belife, flavors of food
  actually simplified in comparison to it’s
  previous era. Though the rich hired chefs
  to make extremely flavorful food on
  occasion, in general the cooks of this
  times kept the flavors simple.
• In the Victorian Era the eating inland was
  now actually possible. This was due to
  railroads and the advances in
  refridgeration which made it actually
  possible for people to transport fish
  without them rotting. This helped influence
  the spread of one of Europe’s most
  famous foods, fish and chips.
• The end Victorian era was the
  beginning of the canned food. These
  foods had very long shelf lives and
  were often cheap which offered a
  nice alternative to the poorer people
  at that time.
• Despite the low quality ad amount of food
  the poor had, the overall quality and
  amount of food of the time had increased.
  This was due to advances in agricultural
  technology which allowed plants to be
  planted faster and crops to be harvester
  faster.
