This document provides a recipe for Hilary's Sweet Salad, which contains baby arugula or mixed greens, dried apricots, cranberries, toasted pecans, sliced apple, and a balsamic vinaigrette dressing made from sugar, canola oil, balsamic vinegar, and salt. The salad is topped with dried fruit and nuts arranged on the greens. Pears or mango can be substituted for the apple depending on the season.
1. 2743200228600Hilary’s Sweet Salad Since<br />Generally She Hates Vegetables<br />1 package baby argula or pretty mixed greens with some purple in there<br />15 dried apricots<br />½ cup craisins<br />toasted, sweetened (Chinese) pecans<br />1 granny smith apple, sliced (but not peeled) <br />¼ c. sugar<br />slightly less than ½ c. canola or veg oil<br />1/6 cup balsamic vinegar<br />½ tsp. salt<br />Slice dried apricots.<br />Put baby arugula in a bowl. Place dried fruit and pecans on top of it.<br />Mix all dressing ingredients (sugar, oil, balsamic and salt.) <br />Toss salad, but not too much, so everyone can see the fruit and nuts through the lettuce.<br />You can subtitue the apple for either pear or mango, depending on season and how neatly you can slice a mango.<br />
