4. FRUIT AND VEGETABLES
According to the report by the FAO of the United Nations (FAO, 2014), 45% of fruit
and vegetable wastes and by-products from the fruit and vegetable processing
industry are generated around the world.
In general, fruit and vegetable wastes are mostly composed of water (80–90%) and
hydrocarbons with relatively small amounts of proteins and fat.
