Ada Pradhaman
Is a classic dessert or traditional payasam of Kerala.
Palada payasam (prepared with rice ada, milk and sugar)
Ada pradhaman (prepared with jaggery, rice ada and coconut milk) is especially
popular during the festival of Onam. It is an integral part of Onam Sadhya Menu.
Ingredients
100 gms Rice Ada
25 gms Tapioca Pearls or Sabudhana or Javarisi
250 gms Jaggery
250 ml Thin coconut milk
100 ml Thick coconut milk
15 gms Coconut bits or thin small pieces
25 gms Cashew nuts split
25 gms Raisins
Pinch Green Cardamom powder
30 gms Ghee or Clarified Butter
Procedure
To the boiing water add rice ada , switch off the stove and let it soak for 30
minutes.
Drain the water completely and rinse the ada 2-3 times in cold water , to prevent
the ada from sticking to each other, and keep it aside for some time.
Soak Sago or Javarisi or Tapioca Pearl or Sabudhana in water, and boil in sufficient
water.

Dissolve jaggery in half cup of water and strain it to remove impurities if any.
Remove from pan.
In a pan, heat coconut milk and jaggery until it thickens.
Once it thickens, add the thin coconut milk (1 1/4 cup). Cook on medium flame
until it thickens again.
Add the boiled ada and Sago , allow to simmer .
Heat 2 tsp of ghee and fry the cashew nuts, raisins and coconut pieces separately.
Now add the fried cashew nuts, raisins, cardamom powder and coconut bits. Mix
well and switch off the flame.
Once it cools, it will thicken further.
