500 g bread flour
1 teaspoon sugar
1 sachet yeast
1 pinch bicarbonate of soda
2 teaspoons sea salt
½ teaspoon ground
cinnamon
250 g ricotta cheese
zest of 1 lemon
2 tablespoons honey
3 large handfuls fresh
strawberries

3. Step#1
Place flour,
sugar, yeast,
soda, sea salt and
cinnamon into
the bowl of a
food processor.

Pour in 600ml of
warm (not hot)
water.

Mix all the crumpet
ingredients
together. Leave it
for 10 minutes to
let the yeast
develop.

In the meantime
put ricotta,
lemon zest and
honey into a
bowl and beat
together until
light and fluffy.

Place half of the
strawberries into
another bowl
and mash up.

Mix delicately
mashed
strawberries with
the ricotta.

When crumpets
dough will be
ready, place a nonstick frying pan on
a medium heat.
Then put spoon of
about 1cm deep
mixture on the hot
pan.

Turn the heat down
to low and leave for
15 minutes to cook
through. When the
bubbles on top have
formed crumpet-like
dimples — turn the
crumpets over and
cook for another 5 to
10 minutes.

Serve the warm
