• 8 thin sliced chicken breasts, boneless &
skinless
Sauce
• 1 cup heavy cream
• ½ cup chicken broth
• 2 tbsps olive oil
• ½ cup parmesan cheese (grated)
• 3 tbsps xanthan gum or arrowroot
• ½ cup sundried tomatoes
• 1 tsp salt
• 1 tsp black pepper
• 1 tsp parsley
Directions
1. Cook the chicken in a large skillet with olive oil over medium heat for 3-5
minutes on each side or until golden brown on each side and until center is
no longer pink. Season chicken with salt and black pepper.
2. Make the sauce by pouring all of the ingredients into a nonstick pan over a
low medium heat (except for the sundried tomatoes). Start with the wet
ingredients first and then slowly mix in the dry ingredients by whisking them
together as the sauce begins to heat. Stir until thickened, add spices. Once
the sauce is nice and thick, add the sundried tomatoes, then turn the heat
down to low to keep the sauce warm. Keep stirring. When your dish is done
cooking, pour over chicken.
