1. Chef Shan

Shanmugam Rajoo @ Chef Shan comes to HELP CAT with a wealth of experience,
having worked in the United Kingdom for over nine (9) years as a chef in fine
foodservice establishments. Chef Shan has excellent resources at his disposal and the
ability to transform ordinary ingredients into a broad range of gastronomic delights. Chef
Shan is the mastermind behind the exclusive colourful culinary revolution and appetite
movement. He is a skilled culinary professional recognized for his comprehensive
knowledge of local, international and continental cuisine. His innovative approach and
great passion for culinary and hospitality industry is a great asset.
While in the UK, I had won the Hammersmith Council Cooking Competition which
earned him the title “Chef of the Year 2008”. Together with my students, i has also
participated in various Culinary Arts Cooking Competitions. For example, recently, I had
won the Silver and Bronze Medal in the Battle of the Chef’s 2014, Penang. I also won
Bronze Medal in team and individual Challenge at the Culinaire Malaysia Cooking
Competition FHM 2013 at the Kuala Lumpur Convention Centre. Another accolade that i
had captured is the ASEAN Heritage Food Trail by Chef Wan cooking competition last
year with “Champions” Tittle. Chef Shan is a Celebrity Chef for Minnal Fm live radio
channel & Astro Vanavil Viluthagaal S9 program with his local cookies and cakes in fine
arts cuisine live cooking show.
Recently, I had been awarded the “National Trainer for food production division” by the
Ministry of Tourism and Cultural Malaysia as recognized to be the national trainer for
culinary modules subjects in Malaysia and also in ASEAN recognition and certification.
His vast culinary experience coupled with a Bsc (Hons) Degree in Culinary Arts
Management from Thames Valley University, London, UK (2002-2004) adds new hues
and vibrancy to the courses that he teaches at HELP College of Arts and Technology, in
Malaysia.

Some of my responsibilities and career developments are as follows:-
Developing and implementing new methods of teaching.
Designing, preparing and developing teaching materials for theory and practical
classes;
Supervising and executing the day to day operations of production and training
kitchen;
Participation in student discipline, monitoring and reporting;
Provide counselling and guidance when students may require;
Delivering lectures, practical and tutorials;
Assessing students' coursework, assessments and assignments;
Setting and marking examinations;
Final examination Invigilation and Room Chief Invigilators;
Maintain professional relationships with all students and able to provide pastoral
care, guidance and support to students;
Supervising students’ research activities/ practical classes;
Representing the institution at professional conferences and seminars, workshops,
field trip, Exhibition, competitions and contributing to these as necessary;
Establishing collaborative links outside the university with industrial, commercial
and public organisations.
Operating 2 Practical Kitchens, 1 Demo Kitchen and 1 College Restaurant for
student practices for special events, demonstrations, conducting culinary talks and
practical classes;
Participating actively in college marketing and advertising activities by handling a
cooking demonstration, culinary showdown and talks about current culinary trends
in Malaysia foodservice industry.
