1. TRENDS IN BAR
BAR:- IT IS A PLACE RATHER A COUNTER WHERE ALCOHOLIC AND NON-
ALCOHOLIC DRINKS ARE SOLD BY:

2. OBJECTIVES
To know about the changes made over places where alcohol was served or sold
To know about the evolution and growth of Bar Industry
To know the aspect of bar responsible for selling of the product
To know the most preferred type of drink by guest
To know which spirit is mostly preferred by the guest
To know the improvements required by the bars for customer satisfaction
To know the challenges faced by the bars
To know the most profitable bar among all types
To know the choices of different age groups when it comes to drinks
To know the scope of bar and know the recent selling techniques used in bars
3. METHODOLOGY
This research was conducted by three students, pursuing BSc. in Management and
Hotel Administration. The researchers have followed the Desk method of research.
This research is conducted largely for the enhancement of knowledge. This
research is done for welfare of human. It is called basic, pure, fundamental research.
The main motivation here is to expand man's knowledge, not to create or invent
something. According to Travers, “Basic Research is designed to add to an
organized body of scientific knowledge and does not necessarily produce results of
immediate practical value.” Such a research is time and cost intensive.
4. HISTORY
There have been many different
names for public drinking spaces
throughout history
In the colonial era in the United States
Taverns were an important meeting
place, as most other institutions were
weak
During the 19th Century saloons were
very important for the leisure time of
the working class
Today the place in an establishment
where the Bartender serves or pours
drinks or mixes beverages is normally
called a bar
5. ALE HOUSE
In the 19th Century Ale House was a term
used for taverns and inns where Ale Beer
was sold
These were mostly run by a married
couple
The lady serving beer to the customers
was called ALE WIFE
The operators of Ale House or Taverns
used to hang vine leaves outside the
taverns to make the customers know
that wine is served too.
6. SPEAKEASY
The sale and consumption of
alcoholic beverages was prohibited
in the first half of the 20th century
in several countries including
Finland, Iceland, Norway, and The
United States.
Illegal Bars during prohibition were
called SPEAKEASIES.
Other names were blind pigs, blind
tigers
7. BARS WITH JUKE BOX
These were bars with Juke Box
These can be found in London,
New York, and Toronto
A Juke Box is a partially
automated music playing device,
usually a coin operated machine
It plays a patron’s selection from
self-contained media
8. BARS WITH LIVE MUSIC
These are bars where live music is played to
entertain the guest
The type of music may be Jazz, rock, or a
country music
The musicians are hired on a contract basis.
Different type of music is played on
different days of the week by different
singers or musicians
Instruments used by singers and musicians
are guitar, drum e.t.c
9. BARS WITH DJ
These are bars where a Disco Jockey
plays music
Typically Disco jockeys mix music
recordings from two or more sources
using different music techniques in
order to produce non-stop flow of
music
They use turntables or DJ mixer to
manipulate recorded sounds in order
to produce new music
They are mostly found in night clubs
and discotheque
10. POOL SIDE BAR
The Bars that are situated along the
side of a swimming pool are termed
as pool side bars
They are mostly found in Resort
Hotels
The customers are few in number
and one or two bartenders are
required to serve
These are operated mostly in the
afternoon and during summers
11. SPORTS BAR
Sports Bars nowadays enjoy a reputation of
being the hottest place in town
Customers enjoy watching football matches
along with beer served in sports bar
Billiards tables and Table football are one of
the best indoor games found in a sports bar
They are mostly visited by college students
and youngsters
12. BEER COCKTAIL
A beer cocktail is a cocktail that
is made by mixing beer with a
distilled beverage or another
style of beer. In this type of
cocktail, the primary ingredient
is beer. A mixture of beer with
a beverage that contains a soft
drink is usually called a shandy.
13. TIKI MUGS
Tiki mugs are large ceramic
cocktail mugs that
originated in tiki bars and
tropical-themed restaurants
. The term "tiki mugs" is a
generic blanket term for
sculptural drinkware that
depict Polynesian, mock-
Polynesian, or tropical
themes. Tiki mugs are not
commonly seen outside tiki
bars and restaurants
14. Molecular Mixology
Molecular mixology is the process
of creating cocktails using the
equipment and techniques of
molecular gastronomy.
The earliest example of what we
now call molecular mixology is the
long-established bartending
practice of layering ingredients in
cocktails. However today the
edible chemicals used are sodium
alginate calcium lactate calcium
gluconate and forms a great part
of molecular mixology.

20. SUMMARY & ANALYSIS
According to the data collected from the various sources of Travel and Tourism Organization, who get in
touch with day to day bar operation and its trend following things can be concluded:
As per the survey most of the bar sales in today’s time is because of the ambience and after that food
and beverage service and brands are considered.
The drinks mostly preferred is straight drink after which cocktails are preferred the most and remaining
population prefer drinks which are good in eye appeal and taste.
Nowadays, guests mostly prefer having whisky after which their second most preferred drink is vodka,
remaining prefer spirit like Gin and Rum which have comparatively less demand.
Around 66.7 percent of people believe that improvement in service style will lead to improvement in
current status of bar, whereas 22.2 percent believe that location will improve the current status of bar and the
remaining 11.1 percent believe that ambience and increase in man power will help to do the same.
According to the survey it has also been revealed that handling large number of pax is a major
challenge faced by bar after which safety and security is a major concern , whereas remaining few percent
believe that competitive pricing is more of a challenge .
As per today’s market condition bar with live bands are considered more profitable as compared to the
sports bar, pool side bar, live band with food bar and cocktail bar.
It has also been observed that most of the guest in today’s time prefer more of straight drinks and
cocktails rather than mock tail and other drinks.
New selling techniques like providing different discount schemes and combos provide a major boost to
the sales as compared to promoting new spirit or using entertainment and direct engagement.
21. CONCLUSION AND SUGGESTIONS
Therefore, it can be concluded that with the introduction of new trends
like laboratory tasting bar, molecular mixology and with different styles
of service the bar industry seems to be growing because of which
various types of cocktails and straight drinks demand has also increased.
It can also be said that bar with live bands and sports bar has more
demand in current market as compared to other bars.
Through this we can also conclude that with the introduction of new
trends in bar every now and then there will be good increase in the
demand and supply by bars.
