While I was on the Minna my duties would be
mess room/cabin steward and assist the cook in
meal preparations also prepare fresh salads ,
Stena Line (Fishgaurd) Steward
The week I was with Stena Line my main duty
was serving passengers in the main food area,
Trinity House /Andy Ianson`s Catering (THS
Patricia)
While I was on the Patricia my job was to
provide waiter service to the passengers (12 max)
this would include silver service, wine waiter,
serving morning tea , serving afternoon coffees
& aperitifs also serving after dinner drinks in the
lounge
I would also look after the passengers cabins,

Leading Hand Steward
As L/H Stwd my duties would be the daily
running of the officers dinning saloon ensuring
all meals were served (silver service evening
meal only ) food temperatures monitored
regularly and the saloon/pantry kept cleaned,
assisting the petty officer (stwd) in the running of
a department (taking charge in there
absents),issuing of loan clothing to new joiners
and associated paper work ,
I would also be a member of the ships medical
team or fire fighting team depending on the ship I
was joining,

crew mess, officers saloon(silver service ),

for various breweries/pubs training in all
aspects of pub management and bar/cellar
management ,this included a three week training
programme with Bass Charringtons in Silver
Town London also include staff
management/training, stock control,
banking/cash handling and customer care and
safety, also as part of my training I was assigned
to pubs to manage while under supervision from
the brewery and gaining various
certificates/qualifications in the pub trade
And experience in becoming a public house
