Ingredients:
1. 1 medium-sized cauliflower head
2. 2 tablespoons coconut oil
3. 1/2 cup diced onion
4. 1/2 cup diced bell peppers
5. 1/2 cup diced carrots
6. 2 cloves garlic, minced
7. 2 tablespoons soy sauce or tamari (gluten-free option)
8. 2 eggs, beaten
9. Salt and pepper to taste
10. Optional toppings: sliced green onions, sesame seeds
Instructions:
Cut the cauliflower into florets and place them in a food processor. Pulse until the cauliflower
resembles rice-like grains.
Heat coconut oil in a large skillet over medium heat. Add the onions, bell peppers, and carrots.
Cook until they start to soften, about 5 minutes.
Add the minced garlic and cauliflower rice to the skillet. Stir well to combine.
Cook for about 5-7 minutes, until the cauliflower is tender but not mushy.
Push the cauliflower rice mixture to one side of the skillet and pour the beaten eggs into the
other side. Scramble the eggs until cooked through.

Cook for another 2-3 minutes to allow the flavors to meld together.
Remove from heat and garnish with sliced green onions and sesame seeds, if desired.
