Low-Carb Cauliflower Fried Rice
Ingredients:
- 1 head of cauliflower
- 1 tablespoon of coconut oil
- ½ cup of diced onions
- ½ cup diced carrots
- ½ cup of diced celery
- 2 cloves of garlic , minced
- 2 tablespoons of soy sauce
- 2 eggs , whisked
- Salt and pepper to taste
- Sliced green onions for garnish
Instructions:
1. Cut the cauliflower into small florets and pulse them in a food processor until it
resembles rice.
2. Heat the coconut oil in a large skillet over medium heat.
3. Add the onions, carrots, and celery, and cook for 3-5 minutes until softened.
4. Add the garlic and cook for another minute until fragrant.
5. Add the cauliflower rice to the skillet and stir to combine with vegetables.
6. Add the soy sauce and stir to combine with the cauliflower rice.
7. Push the cauliflower rice to one side of the skillet and add the whisked eggs to the
other side .
8. Scramble the eggs until cooked and then stir them in with the cauliflower rice.
9. Season with salt and pepper to taste .
10. Garnish with sliced green onions and serve.
