1/2 cup diced carrots
2 cloves garlic, minced
2 eggs, beaten
2 tablespoons soy sauce or tamari (gluten-free option)
Salt and pepper to taste
Optional: sliced green onions for garnish
2. Instructions:
Cut the cauliflower into florets and place them in a food processor. Pulse
until the cauliflower resembles rice-like grains.
Heat coconut oil in a large skillet or wok over medium heat.
Add the diced onion, bell peppers, and carrots to the skillet. Cook for 5-7
minutes until the vegetables are tender.
Add the minced garlic and cook for an additional minute.
Push the vegetables to one side of the skillet and pour the beaten eggs
onto the other side. Scramble the eggs until cooked through.
Mix the scrambled eggs with the vegetables in the skillet.
Add the riced cauliflower to the skillet and stir well to combine with the
vegetables and eggs.
Pour the soy sauce or tamari over the mixture and stir to evenly
distribute.
Cook for an additional 5-7 minutes, stirring occasionally, until the
cauliflower is tender but not mushy.
Season with salt and pepper to taste.
Serve hot, garnished with sliced green onions if desired.
