2. Here's a simple recipe for a delicious keto-friendly meal:
Recipe: Keto Chicken Alfredo Zoodles
Ingredients:
2 medium zucchini
2 chicken breasts, boneless and skinless
2 tablespoons olive oil
2 cloves garlic, minced
1 cup heavy cream
1/2 cup grated Parmesan cheese
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Instructions:
Using a spiralizer or a vegetable peeler, create zucchini noodles (zoodles) from the zucchini.
Set aside.
Season the chicken breasts with salt and pepper on both sides.
Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken
breasts and cook for about 6-8 minutes per side until cooked through. Remove the chicken
from the skillet and set aside to rest.
In the same skillet, add the remaining tablespoon of olive oil and minced garlic. Sauté for
about 1 minute until fragrant.
Pour in the heavy cream and bring to a simmer. Cook for about 2-3 minutes, stirring
occasionally.
Stir in the grated Parmesan cheese and continue cooking until the sauce thickens. Season
with salt and pepper to taste.
While the sauce is simmering, slice the cooked chicken breasts into thin strips.
Add the zucchini noodles to the skillet with the Alfredo sauce and toss to coat them evenly.
Cook for about 2-3 minutes until the zoodles are tender but still slightly crisp.
Add the sliced chicken back into the skillet with the zoodles and sauce. Toss everything
together until well combined and heated through.
Remove from heat and garnish with fresh chopped parsley.
Serve the Keto Chicken Alfredo Zoodles while still warm and enjoy a flavorful, low-carb
meal!
