13. Details of the Internship Program:
2 Year Paid Seasonal Internship Placement from May until October
Opportunity to work within the multiple on-site locations:
Pub, Grill, Banquets, Breakfast, Off-Site Catering & Staff Dining
Assist with the planning & creating of Staff Dining Meals
One-on-One on the job training with Executive Chef, Mark Marchment
and O&B Windermere House Sous Chefs.
14. Executive Chef, Windermere House
With over 20 years of luxury-culinary
experience, Chef Mark Marchment brings a
wealth of experience and knowledge to Oliver
& Bonacini at Windermere House. Mark
started his hospitality career with an
apprenticeship at The Windsor Arms Hotel
under Executive Chef Michael Bonacini. After
gaining extensive experience including Four-
Diamond hotels and award-winning Toronto
restaurants, he returned to work with his
mentor (Michael Bonacini) in the position of
opening Executive Chef of Oliver & Bonacini
Café Grill, Blue Mountain. Most recently, Mark
was recognized for opening of The Rosseau, A
JW Marriott Resort and Spa as Director of Food
& Beverage / Executive Chef. Mark is excited to
bring the O&B vision to Muskoka by using local
and organic foods and drawing on the
philosophy of ‘let the food speak for itself.’
Mark is an integral part in bringing a little piece
of O&B to the picturesque Lake Rosseau.
20. HOW TO APPLY:
Interested & Suitable students will apply to CIC’s Program Manager and Internship
Coordinator
APPLICATION REQUIREMENTS:
You Must be a Culinary Institute of Canada student
Students must pass all their course work & maintain a minimum academic average
to qualify
Students should receive recommendations from 4 of their instructors
Selected students will be interviewed by Executive Chef Mark Marchment.
21. After Successfully Completing this Internship Program
You Will:
Graduate from The Culinary Institute of Canada Culinary Arts Program, Holland
College
Receive an O&B Internship Certificate
An Opportunity for Employment at another O&B Restaurant or O&B Event Space
