According to CNN, falafels and kofta rank among
the top 20 popular dishes of the Middle East. A
vegetarian snack or entree, falafels can be eaten
by themselves with tahina sauce or stuffed in pita
bread with tomatoes and lettuce and served with
tahina sauce. The dish is comprised of chickpeas
and various herbs, such as parsley and cilantro.
Falafels also contain garlic, cumin, and hot
pepper.
3. Falafels and Kofta
Blended in a food processor and then rolled into a
ball, each piece is fried in 375-degree oil and
drained on paper before serving.
Kofta, a traditional meal from Iran and Pakistan, is
minced lamb or beef. Depending on the country
where the dish is served, kofta may be formed
into a patty to bake or barbeque or shaped into a
cylinder and skewered for grilling. Warm spices,
ranging from allspice to ginger, season the dish. It
is served with tzatziki, a traditional Greek sauce
for meats, or a spicy sauce.
