1. Holiday Side Dishes
Silken Pumpkin Pie Mousse
Prep time: 10 minutes • Chill time: 4 hours
Ingredients:
1 10 oz. package silken tofu
1 teaspoon lemon zest
1/4 cup maple syrup
1 1/2 teaspoons vanilla extract
1/2 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/4 tsp. allspice
Pinch of ground cloves
Pinch of salt
1 (29-ounce) can pumpkin puree
10 gingersnaps crushed with rolling pin (optional)
light whipped topping (optional)
Directions:
1. Place tofu, lemon zest, maple syrup, vanilla, spices, and salt in a blender and blend
until smooth.
2. Add half the pumpkin and blend again. Transfer to a medium-sized bowl and stir in the
remaining pumpkin until mixture is uniform and creamy. Transfer to serving dishes.
3. Cover and chill before serving.
4. If using gingersnaps, place cookies in plastic zip lock bag, and crush with a rolling pin.
5. Add a dollop of whipped topping and a sprinkle of gingersnap pieces to each serving.
6. Serve immediately.
