Background	
  
	
   Obesity	
  is	
  a	
  major	
  health	
  concern	
  around	
  the	
  world,	
  affecting	
  more	
  than	
  one-­‐third	
  of	
  U.S.	
  
adults.	
  The	
  estimated	
  medical	
  cost	
  of	
  obesity	
  in	
  the	
  United	
  States	
  was	
  $147	
  billion	
  in	
  2008,	
  largely	
  
due	
  to	
  the	
  chronic	
  conditions	
  that	
  are	
  related	
  to	
  obesity.	
  These	
  conditions	
  include	
  heart	
  disease,	
  
stroke,	
  type	
  2	
  diabetes,	
  and	
  certain	
  types	
  of	
  cancer	
  (1).	
  	
  Obese	
  individuals	
  also	
  suffer	
  from	
  more	
  
illness	
  and	
  have	
  more	
  absences	
  from	
  work.	
  In	
  2010,	
  researchers	
  estimated	
  that	
  the	
  annual	
  cost	
  
attributed	
  to	
  obesity	
  among	
  full-­‐time	
  employees	
  in	
  the	
  U.S.	
  is	
  $73.1	
  billion,	
  which	
  included	
  direct	
  
medical	
  expenditures	
  and	
  the	
  estimated	
  value	
  of	
  lost	
  productivity	
  and	
  absenteeism	
  among	
  U.S.	
  
employees	
  (2).	
  Initiatives	
  to	
  achieve	
  a	
  healthy	
  workforce	
  can	
  lead	
  to	
  improved	
  health	
  of	
  individual	
  
employees	
  and	
  can	
  benefit	
  employers	
  economically.	
  	
  
Johnson	
  &	
  Johnson	
  began	
  a	
  worksite	
  health	
  promotion	
  program	
  in	
  1979.	
  Their	
  health	
  
promotion	
  program,	
  which	
  has	
  since	
  grown	
  and	
  evolved,	
  has	
  been	
  associated	
  with	
  improved	
  
employee	
  health,	
  reduced	
  inpatient	
  health	
  care	
  spending,	
  decreased	
  employee	
  absenteeism,	
  and	
  
better	
  employee	
  attitudes.	
  From	
  2002-­‐2008	
  Johnson	
  &	
  Johnson	
  experienced	
  a	
  3.7	
  percent	
  lower	
  
average	
  annual	
  growth	
  in	
  medical	
  costs	
  compared	
  to	
  the	
  costs	
  reported	
  by	
  other	
  companies	
  of	
  
similar	
  industry	
  and	
  size.	
  Additionally,	
  in	
  2009	
  Johnson	
  &	
  Johnson	
  experienced	
  a	
  return	
  on	
  
investment	
  of	
  an	
  estimated	
  $3.92	
  in	
  savings	
  for	
  every	
  dollar	
  spent	
  on	
  the	
  health	
  promotion	
  
program,	
  as	
  estimated	
  by	
  Baicker	
  and	
  colleagues	
  in	
  2010	
  (3).	
  	
   	
  
Why	
  Healthy	
  Catering?	
  	
  
Health	
  promotion	
  programs	
  that	
  focus	
  on	
  nutrition	
  can	
  have	
  a	
  positive	
  effect	
  on	
  dietary	
  
behavior	
  and	
  on	
  the	
  overall	
  health	
  of	
  employees.	
  Nutrition	
  interventions	
  can	
  occur	
  at	
  multiple	
  
levels	
  throughout	
  the	
  organization,	
  most	
  typically	
  occurring	
  at	
  the	
  individual	
  level	
  (e.g.	
  
personalized	
  diet	
  programs,	
  cooking	
  demonstrations)	
  and	
  the	
  policy/environmental	
  level	
  (e.g.	
  
healthier	
  cafeteria	
  options)(4).	
  On	
  an	
  environmental	
  level,	
  having	
  a	
  cafeteria	
  that	
  offers	
  healthy	
  
choices	
  within	
  the	
  workplace	
  improves	
  eating	
  habits	
  of	
  employees,	
  but	
  interventions	
  also	
  are	
  
needed	
  to	
  eliminate	
  unhealthier	
  choices	
  and	
  encourage	
  employees	
  to	
  make	
  healthier	
  choices	
  (5,6).	
  	
  
Fueling	
  employees	
  with	
  healthy	
  and	
  well-­‐balanced	
  meals	
  can	
  improve	
  employee	
  health	
  in	
  
the	
  long-­‐term	
  and	
  reduce	
  absenteeism,	
  but	
  it	
  can	
  also	
  increase	
  “presenteeism”	
  –	
  the	
  ability	
  of	
  
employees	
  to	
  be	
  fully	
  engaged	
  and	
  focused	
  on	
  their	
  work.	
  According	
  to	
  a	
  Quantum	
  Workplace	
  
Report,	
  employees	
  are	
  ten	
  percent	
  more	
  engaged	
  when	
  they	
  are	
  provided	
  healthier	
  food	
  options	
  
(7).	
  In	
  a	
  survey	
  of	
  employees	
  across	
  55	
  organizations,	
  the	
  most	
  commonly	
  cited	
  barrier	
  to	
  
nutrition	
  was	
  “unhealthy	
  food	
  available	
  in	
  office”	
  (4).	
  Choosing	
  healthier	
  options	
  when	
  purchasing	
  
catering	
  for	
  employees	
  is	
  one	
  strategy	
  for	
  affecting	
  positive	
  nutrition	
  changes	
  in	
  the	
  workplace	
  
environment.	
  	
  
Opportunities	
  at	
  AMITA	
  
	
   At	
  the	
  AMITA	
  Health	
  and	
  Wellness	
  office,	
  many	
  meals	
  and	
  snacks	
  are	
  ordered	
  from	
  outside	
  
restaurants	
  and	
  vendors	
  to	
  provide	
  nourishment	
  for	
  employees	
  during	
  meetings.	
  According	
  to	
  
Berenice	
  Carlson,	
  Regional	
  Director	
  of	
  Health	
  &	
  Wellness	
  for	
  AMITA,	
  catered	
  meals	
  and	
  snacks	
  
typically	
  consist	
  of	
  foods	
  high	
  in	
  saturated	
  fat,	
  sodium,	
  processed	
  meats,	
  and	
  sugar.	
  Additionally,	
  
catered	
  items	
  that	
  contain	
  vegetables	
  typically	
  contain	
  very	
  little	
  nutrition	
  (e.g.	
  salad	
  with	
  iceberg	
  
lettuce)

Healthier  Corporate  Dining                                                                  Kathryn  Lyons   AMITA  Health  System                        NIU  Dietetic  Intern    3   Proposal   Background     Obesity  is  a  major  health  concern  around  the  world,  affecting  more  than  one-­‐third  of  U.S.   adults.  The  estimated  medical  cost  of  obesity  in  the  United  States  was  $147  billion  in  2008,  largely   due  to  the  chronic  conditions  that  are  related  to  obesity.  These  conditions  include  heart  disease,   stroke,  type  2  diabetes,  and  certain  types  of  cancer  (1).    Obese  individuals  also  suffer  from  more   illness  and  have  more  absences  from  work.  In  2010,  researchers  estimated  that  the  annual  cost   attributed  to  obesity  among  full-­‐time  employees  in  the  U.S.  is  $73.1  billion,  which  included  direct   medical  expenditures  and  the  estimated  value  of  lost  productivity  and  absenteeism  among  U.S.   employees  (2).  Initiatives  to  achieve  a  healthy  workforce  can  lead  to  improved  health  of  individual   employees  and  can  benefit  employers  economically.     Johnson  &  Johnson  began  a  worksite  health  promotion  program  in  1979.  Their  health   promotion  program,  which  has  since  grown  and  evolved,  has  been  associated  with  improved   employee  health,  reduced  inpatient  health  care  spending,  decreased  employee  absenteeism,  and   better  employee  attitudes.  From  2002-­‐2008  Johnson  &  Johnson  experienced  a  3.7  percent  lower   average  annual  growth  in  medical  costs  compared  to  the  costs  reported  by  other  companies  of   similar  industry  and  size.  Additionally,  in  2009  Johnson  &  Johnson  experienced  a  return  on   investment  of  an  estimated  $3.92  in  savings  for  every  dollar  spent  on  the  health  promotion   program,  as  estimated  by  Baicker  and  colleagues  in  2010  (3).       Why  Healthy  Catering?     Health  promotion  programs  that  focus  on  nutrition  can  have  a  positive  effect  on  dietary   behavior  and  on  the  overall  health  of  employees.  Nutrition  interventions  can  occur  at  multiple   levels  throughout  the  organization,  most  typically  occurring  at  the  individual  level  (e.g.   personalized  diet  programs,  cooking  demonstrations)  and  the  policy/environmental  level  (e.g.   healthier  cafeteria  options)(4).  On  an  environmental  level,  having  a  cafeteria  that  offers  healthy   choices  within  the  workplace  improves  eating  habits  of  employees,  but  interventions  also  are   needed  to  eliminate  unhealthier  choices  and  encourage  employees  to  make  healthier  choices  (5,6).     Fueling  employees  with  healthy  and  well-­‐balanced  meals  can  improve  employee  health  in   the  long-­‐term  and  reduce  absenteeism,  but  it  can  also  increase  “presenteeism”  –  the  ability  of   employees  to  be  fully  engaged  and  focused  on  their  work.  According  to  a  Quantum  Workplace   Report,  employees  are  ten  percent  more  engaged  when  they  are  provided  healthier  food  options   (7).  In  a  survey  of  employees  across  55  organizations,  the  most  commonly  cited  barrier  to   nutrition  was  “unhealthy  food  available  in  office”  (4).  Choosing  healthier  options  when  purchasing   catering  for  employees  is  one  strategy  for  affecting  positive  nutrition  changes  in  the  workplace   environment.     Opportunities  at  AMITA     At  the  AMITA  Health  and  Wellness  office,  many  meals  and  snacks  are  ordered  from  outside   restaurants  and  vendors  to  provide  nourishment  for  employees  during  meetings.  According  to   Berenice  Carlson,  Regional  Director  of  Health  &  Wellness  for  AMITA,  catered  meals  and  snacks   typically  consist  of  foods  high  in  saturated  fat,  sodium,  processed  meats,  and  sugar.  Additionally,   catered  items  that  contain  vegetables  typically  contain  very  little  nutrition  (e.g.  salad  with  iceberg   lettuce)  (8).  Calculated  nutrition  information  is  not  available  for  restaurants  unless  they  are  part   of  a  larger  chain  operation,  so  exact  nutrition  information  is  not  known.  However,  the  appendices
