 Understand prevention and transmission of food-borne diseases
What’s the difference?
• Food safety is how food is handled to prevent food borne illness.
• Food Sanitation is the cleanliness of equipment and facilities.
Healthy food
• Vegetarian food organically grown and with no additives, eaten for its dietary value and benefit to health.
Definition
Healthy Food
 Any food believed to be ‘good for you’, especially if high in fiber, natural vitamins, fructose, etc. Healthy foods may
reduce cholesterol, reduce atherosclerosis and risk of stroke, help control glucose, halt progression of osteoporosis,
and reduce the risk of infections, cancer
Examples Apples, beans, carrots, cranberry juice, fish, garlic, ginger, nuts, oats, olive oil, soy foods, tea, yogurt
Healthy food
A food believed to be highly beneficial to health, especially a food grown organically and free of chemical additives.
Basics for Handling Food Safely
 Clean - Wash hands and surfaces often.
 Separate - Don’t cross-contaminate.
 Cook - Cook to proper temperatures.
 Chill - Refrigerate promptly.
Shopping
 Purchase refrigerated or frozen items after selecting your non-perishables.
 Never choose meat or poultry in packaging that is torn or leaking.
 Do not buy food past “Sell-By,” “Use-By,” or other expiration dates.
Storage
 Always refrigerate perishable food within 2 hours (1 hour when the temperature is above 90 °F).
 Check the temperature of your refrigerator and freezer with an appliance thermometer. The refrigerator should be at
40 °F or below and the freezer at 0 °F or below.
 Cook or freeze fresh poultry, fish, ground meats, and variety meats within 2 days; other beef, lamb, within 3 to 5 days.
 Perishable food such as meat and poultry should be wrapped securely to maintain quality and to prevent meat juices
from getting onto other food.
Preparation
 Always wash hands before and after handling food.
 Don’t cross-contaminate. Keep raw meat, poultry, fish, and their juices away from other food. After cutting raw
meats, wash hands, cutting board, knife, and counter tops with hot, soapy water.
 Marinate meat and poultry in a covered dish in the refrigerator.
 Sanitize cutting boards by using a solution of 1 teaspoon chlorine bleach of water.
Thawing
 Refrigerator: The refrigerator allows slow, safe thawing. Make sure thawing meat and poultry juices do not drip
onto other food.
 Cold Water: For faster thawing, place food in a leak-proof plastic bag. Submerge in cold tap water. Change the
water every 30 minutes. Cook immediately after thawing.
 Microwave: Cook meat and poultry immediately after microwave thawing
Cooking
 Ground meat: Cook all raw ground beef,pork, lamb, and veal to an internal temperature of 160°F as measured
with a food thermometer.
 Poultry: Cook all poultry to an internal temperature of 165°F as measured with a food thermometer.
Food preservation methods
 Food preservation is the process of treating and handling food to stop or slow down spoilage (loss of quality, edibility
or nutritional value) and thus allow for longer storage.
Drying
 Drying is one of the most ancient food preservation techniques, which reduces water activity sufficiently to prevent or
delay bacterial growth
Refrigeration
 Refrigeration preserves food by slowing down the growth and reproduction of micro-organisms .
Vacuum Packing
 Vacuum-packing stores food in a vacuum environment, usually in an air-tight bag or bottle. The vacuum environment
strips bacteria of oxygen needed for survival, slowing spoiling. Vacuum-packing is commonly used for storing nuts to
reduce loss of flavor from oxidation
Salt
 Salting or curing draws moisture from the meat through a process of osmosis. Meat is cured with salt or sugar, or a
combination of the two. Nitrates and nitrites are also often used to cure meat and contribute the characteristic pink
color, as well as inhibition of Clostridium botulinum.
Sugar
 Sugar is used to preserve fruits, either in syrup with fruit such as apples, pears, peaches, apricots, plums or in
crystallized form where the preserved material is cooked in sugar to the point of crystallisation and the resultant
product is then stored dry
Burning
 Smoking is used to lengthen the shelf life of perishable food items. This effect is achieved by exposing the food to
smoke from burning plant materials.
 Tea leaves are also smoked, but mainly for cooking or flavoring them. It is one of the oldest food preservation
methods, which probably arose after the development of cooking with fire.
Pickling
 Pickling is a method of preserving food in an edible anti-microbial liquid. Pickling can be broadly categorized as
chemical pickling for example, In chemical pickling, the food is placed in an edible liquid that inhibits or kills bacteria
and other micro-organisms. Typical pickling agents include brine (high in salt), vinegar, alcohol, and vegetable oil,
especially olive oil but also many other oils
Canning and bottling
 Canning involves cooking food, sealing it in sterile cans or jars, and boiling the containers to kill or weaken any
remaining bacteria as a form of sterilization. It was invented by Nicolas Appert.
 Food preserved by canning or bottling is at immediate risk of spoilage once the can or bottle has been opened.
Jellying
 Food may be preserved by cooking in a material that solidifies to form a gel
Burial in Ground
 Burial of food can preserve it due to a variety of factors: lack of light, lack of oxygen, cool temperatures, pH level, or
desiccants in the soil. Burial may be combined with other methods such as salting or fermentation. Most foods can be
preserved in soil that is very dry and salty (thus a desiccant), or soil that is frozen
Prevention of Food-Borne Diseases

 Keep Clean, Keep
 Separate Raw and Cooked Food
 Cooked thoroughly
 Keep food at safe temperatures
 Use safe water and raw materials

Food Sanitation By SHAHINA BANO Objectives At the end of this session the students will be able to  Define healthy food  Understand food sanitation and food safety  Discuss the principles of safe food handling  Explain methods of food preservations  Understand prevention and transmission of food-borne diseases What’s the difference? • Food safety is how food is handled to prevent food borne illness. • Food Sanitation is the cleanliness of equipment and facilities. Healthy food • Vegetarian food organically grown and with no additives, eaten for its dietary value and benefit to health. Definition Healthy Food  Any food believed to be ‘good for you’, especially if high in fiber, natural vitamins, fructose, etc. Healthy foods may reduce cholesterol, reduce atherosclerosis and risk of stroke, help control glucose, halt progression of osteoporosis, and reduce the risk of infections, cancer Examples Apples, beans, carrots, cranberry juice, fish, garlic, ginger, nuts, oats, olive oil, soy foods, tea, yogurt Healthy food A food believed to be highly beneficial to health, especially a food grown organically and free of chemical additives. Basics for Handling Food Safely  Clean - Wash hands and surfaces often.  Separate - Don’t cross-contaminate.  Cook - Cook to proper temperatures.  Chill - Refrigerate promptly.

Shopping  Purchase refrigerated or frozen items after selecting your non-perishables.  Never choose meat or poultry in packaging that is torn or leaking.  Do not buy food past “Sell-By,” “Use-By,” or other expiration dates. Storage  Always refrigerate perishable food within 2 hours (1 hour when the temperature is above 90 °F).  Check the temperature of your refrigerator and freezer with an appliance thermometer. The refrigerator should be at 40 °F or below and the freezer at 0 °F or below.  Cook or freeze fresh poultry, fish, ground meats, and variety meats within 2 days; other beef, lamb, within 3 to 5 days.  Perishable food such as meat and poultry should be wrapped securely to maintain quality and to prevent meat juices from getting onto other food. Preparation  Always wash hands before and after handling food.  Don’t cross-contaminate. Keep raw meat, poultry, fish, and their juices away from other food. After cutting raw meats, wash hands, cutting board, knife, and counter tops with hot, soapy water.  Marinate meat and poultry in a covered dish in the refrigerator.  Sanitize cutting boards by using a solution of 1 teaspoon chlorine bleach of water. Thawing  Refrigerator: The refrigerator allows slow, safe thawing. Make sure thawing meat and poultry juices do not drip onto other food.  Cold Water: For faster thawing, place food in a leak-proof plastic bag. Submerge in cold tap water. Change the water every 30 minutes. Cook immediately after thawing.  Microwave: Cook meat and poultry immediately after microwave thawing Cooking  Ground meat: Cook all raw ground beef,pork, lamb, and veal to an internal temperature of 160°F as measured with a food thermometer.  Poultry: Cook all poultry to an internal temperature of 165°F as measured with a food thermometer.

Food preservation methods  Food preservation is the process of treating and handling food to stop or slow down spoilage (loss of quality, edibility or nutritional value) and thus allow for longer storage. Drying  Drying is one of the most ancient food preservation techniques, which reduces water activity sufficiently to prevent or delay bacterial growth Refrigeration  Refrigeration preserves food by slowing down the growth and reproduction of micro-organisms . Vacuum Packing  Vacuum-packing stores food in a vacuum environment, usually in an air-tight bag or bottle. The vacuum environment strips bacteria of oxygen needed for survival, slowing spoiling. Vacuum-packing is commonly used for storing nuts to reduce loss of flavor from oxidation Salt  Salting or curing draws moisture from the meat through a process of osmosis. Meat is cured with salt or sugar, or a combination of the two. Nitrates and nitrites are also often used to cure meat and contribute the characteristic pink color, as well as inhibition of Clostridium botulinum. Sugar  Sugar is used to preserve fruits, either in syrup with fruit such as apples, pears, peaches, apricots, plums or in crystallized form where the preserved material is cooked in sugar to the point of crystallisation and the resultant product is then stored dry Burning
  • 4.  Smoking is used to lengthen the shelf life of perishable food items. This effect is achieved by exposing the food to smoke from burning plant materials.  Tea leaves are also smoked, but mainly for cooking or flavoring them. It is one of the oldest food preservation methods, which probably arose after the development of cooking with fire. Pickling  Pickling is a method of preserving food in an edible anti-microbial liquid. Pickling can be broadly categorized as chemical pickling for example, In chemical pickling, the food is placed in an edible liquid that inhibits or kills bacteria and other micro-organisms. Typical pickling agents include brine (high in salt), vinegar, alcohol, and vegetable oil, especially olive oil but also many other oils Canning and bottling  Canning involves cooking food, sealing it in sterile cans or jars, and boiling the containers to kill or weaken any remaining bacteria as a form of sterilization. It was invented by Nicolas Appert.  Food preserved by canning or bottling is at immediate risk of spoilage once the can or bottle has been opened. Jellying  Food may be preserved by cooking in a material that solidifies to form a gel Burial in Ground  Burial of food can preserve it due to a variety of factors: lack of light, lack of oxygen, cool temperatures, pH level, or desiccants in the soil. Burial may be combined with other methods such as salting or fermentation. Most foods can be preserved in soil that is very dry and salty (thus a desiccant), or soil that is frozen Prevention of Food-Borne Diseases The Five Keys to Safer Foods are  Keep Clean, Keep  Separate Raw and Cooked Food  Cooked thoroughly  Keep food at safe temperatures  Use safe water and raw materials
