ca starch
250 ml of water
250 ml of milk
125 ml of oil (canola,
sunflower, or peanut
oil)
3 cups of grated cured
cheese (it can be also
used parmesan, or
pecorino)
2 whole eggs
Salt to taste

Place tapioca in a bowl
and mix the water,
milk and oil in a pan
and bring to the stove
until it heats up (not
necessary to boil).
Add the mixture to the
starch and mix it up
with your hands. The
dough will start to stick
up to your hands. Then
add the cheese and the
dough will start to pull
away from the sides
and the bottom of the
bowl.
Add the eggs and salt
to taste.
The consistency should
besoftbutfirmenough
to form balls. If the
dough starts to stick
up to much to your
hands, use the tapioca
starch
to help rolling the balls.
Form 4 inch balls and
place them on a bak-
ing sheet covered with
parchment paper.
Preheat the oven to
350˚F. position a rack
in the center of the oven
and fill a heat resistant
bowl with water and
place in the very center
of the rack.
The water will prevent
the cheese bread from
drying out.
Place the balls on a bak-
ing sheet covered with
parchment paper and
bake for 20 minutes
until light yellow on
the outside and golden
brown on the bottom.

arrangements regarding
color, ergonomics and
shapes I was ready to
present my client a new
concept of just “sharing
recipes” magazine. The
client’s point of view was
to achieve openness and
minimalist graphic style.
