Flour additives serve many purposes, from improving flour’s appearance and the dough’s workability to giving flour a longer shelf life. These benefits mean that people have access to more varieties of food and safe foods are available to more people. These additives are not designed primarily to improve the health of consumers, however; that is the role of vitamins and minerals added to flour in the fortification process.
