Following initial training during the engagement period, his priority was to learn about the Standards of Services for the
Cantonese Cuisine and its rich and diverse ways to preparation and service styles: from the Classic Cantonese via the
Modern Signature Dishes to the DimSum
Fabio highlights the opportunity to learn how to provide Silver Service and Carving of the Pekin Duck while assisting the
Maitre D. to the Hakkasan Standards and while supporting the Expeditor on the Food Pass, he learned how to prepare
"Mise en Place" for the main dishes correctly, as well as prepare Chinese Tea using the Infusion equipment and
technique.
