Absorption
The small intestine absorbs nutrients through different mechanisms: it actively transports monosaccharides and amino acids, uses facilitated diffusion for monosaccharides and amino acids, absorbs fat micelles and lipoproteins through simple diffusion and exocytosis, respectively.
Obesity
Over 72 million Americans are obese, defined as having a body mass index (BMI) over 30, which contributes to $100 billion in annual healthcare costs. Obesity is linked to increased risk of serious health conditions such as type 2 diabetes, heart disease, hypertension, breast cancer, colon cancer, gout, gallstones, and osteoarthritis.
Rumination
The ruminant stomach has multiple chambers that allow for the rechewing and breakdown of cellulose. The first chamber, the rumen, is where fermentation occurs. Following the rumen are three additional chambers that further digest food before it reaches the small intestine.
Amino acids
Proteins are composed of amino acids as monomers. There are four major types of amino acids that make up proteins: nonpolar, polar, acidic, and basic.
Water
Water is a polar solvent that can dissolve many other polar substances. It also acts as a temperature stabilizer due to its high specific heat capacity. The hydrogen bonding between water molecules gives water high surface tension and allows it to act as a lubricant.
