This document discusses the settling process of cassava starch particles in rectangular channels used in Colombian rallanderías. It finds that particles greater than 10μm were efficiently retained in the first 104m of the 165m long channels, while particles between 6.7-8.8μm were discharged into local waterways, causing environmental issues. The settling process determines the capacity of the starch industry, so evaluating the sedimentation in these channels is important.
