This document discusses the formulation and sensory evaluation of tamarind candy. Tamarind fruit has a sweet and sour taste due to tartaric acid and sugars. Tamarind candy was prepared using tamarind pulp, jaggery, and either dry ginger powder or black pepper powder. Sensory evaluation found the candy with ginger received higher ratings than the pepper candy due to its spiciness. Nutritional analysis found one candy provides around 100 calories, carbohydrates, calcium, and iron. The tamarind candy with ginger was concluded to aid digestion and provide relief from flatulence while being economically priced.
