The Fort Hires New General Manager, Tom Lucas
Lucas brings more than 25 years of restaurant industry experience to Denver’s landmark restaurant
July 23, 2014 – DENVER, COLORADO – The Fort restaurant of Denver welcomes a refreshing
employee shift this summer with a new hire, Tom Lucas, assuming the role of general manager.
Lucas brings more than 25 years of industry experience and nearly a decade of managerial
experience to The Fort, which sells more buffalo steaks than any other independently owned
restaurant in the country.
“The history and the elegance of The Fort has intrigued me, and has brought a whole new meaning
to me in my position as general manager,” said Lucas. “I have such a passion for food and service,
which I hope to keep going here at The Fort for many years to come. Maintaining the integrity and
the history of The Fort is my number one priority.”
Lucas offers a wide range of skill and expertise relative to the industry and has been contracted to
serve several Denver restaurants in need of managerial guidance. His strengths lie in raising the bar
and then establishing consistency in hiring, training, customer service, inventory and computer
systems and private dining facilitation, among others.
“We are thrilled to welcome Tom to The Fort family,” said Holly Arnold Kinney, owner and
proprietress. “We are always looking to improve our guest experience, believing that we can always
be better. Tom brings extensive experience to an already fabulous crew, and I know his guidance
and assistance will ensure The Fort’s continued success.”
Lucas earned his Bachelor’s degree in Business Management from the University of Nebraska. He is
fluent in Spanish and Portuguese, has an extensive wine and spirits knowledge, and strives to always
provide top-notch customer service.
About The Fort
The Fort is an award-winning “truly Colorado” restaurant located in Southwest Denver, in Red Rocks
Territory. The restaurant has been recognized by local and national media including The New York Times,
Sunset Magazine, Bon Appétit, 5280 Magazine, and the Today Show with Al Roker. The Fort specializes in
game meat, especially buffalo steaks, elk and quail, as well as salmon, trout and hearty vegetarian fare
influenced by American Indian and Mountain Man cuisine. The restaurant sells more buffalo steaks than any
other independently owned restaurant in the country. Holly Arnold Kinney, proprietress and award-winning
author, has taken The Fort restaurant to the next level in setting new standards creating “New Foods of the
Old West” bringing back popular recipes from the 19th century and adding a modern twist. The Fort building
is on the National Register of Historic Places and is a full-scale adobe replica of Bent’s Fort, an important
