Keto-Friendly Lemon Garlic Chicken with Broccoli
Ingredients:
● 2 boneless, skinless chicken breasts
● 2 tablespoons olive oil
● 3 cloves garlic, minced
● 1 teaspoon dried thyme
● 1 teaspoon dried rosemary
● Juice of 1 lemon
● Zest of 1 lemon
● Salt and pepper to taste
● 2 cups broccoli florets
Instructions:
1. Preheat your oven to 375°F (190°C).
2. In a small bowl, mix together the minced garlic, dried thyme, dried rosemary, lemon juice,
lemon zest, salt, and pepper.
3. Place the chicken breasts in a baking dish and pour the garlic and herb mixture over
them. Make sure the chicken is well coated.
4. Heat the olive oil in a skillet over medium-high heat. Once the oil is hot, add the chicken
breasts and sear them for 2-3 minutes on each side until they are golden brown.
5. Remove the chicken from the skillet and set it aside. Add the broccoli florets to the same
skillet and cook for 3-4 minutes until they are slightly tender.
6. Place the seared chicken breasts on top of the broccoli in the baking dish. Pour any
remaining garlic and herb mixture over the chicken.
7. Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and
reaches an internal temperature of 165°F (74°C).
8. Once cooked, remove from the oven and let it rest for a few minutes. Serve the lemon
garlic chicken with broccoli and enjoy!
