Keto-friendly Avocado and Bacon Stuffed Chicken Breasts:
Ingredients:
For the Chicken:
● 2 boneless, skinless chicken breasts
● 2 ripe avocados, peeled and pitted
● 4 slices of bacon
● 1/2 cup shredded mozzarella cheese
● 1/2 teaspoon garlic powder
● Salt and pepper to taste
● Olive oil for cooking
For the Avocado Salsa:
● 2 ripe avocados, diced
● 1/4 cup diced red onion
● 1/4 cup diced tomato
● 2 tablespoons fresh cilantro, chopped
● 1 tablespoon lime juice
● Salt and pepper to taste
Instructions:
​ Preheat your oven to 375°F (190°C).
​ Start by making the avocado salsa. In a bowl, combine the diced avocados, red onion,
tomato, cilantro, and lime juice. Season with salt and pepper to taste. Set this aside.
​ Slice the avocados for stuffing the chicken breasts and set them aside.
​ Lay each chicken breast flat on a cutting board and, using a sharp knife, make a
pocket in the center by slicing horizontally but not cutting all the way through. Be
careful not to cut through to the other side.
​ Season the inside of the chicken breasts with garlic powder, salt, and pepper.
​ Place sliced avocados and shredded mozzarella cheese inside the pocket of each
chicken breast.
​ Wrap 2 slices of bacon around each chicken breast, securing the avocados and
cheese inside. You can use toothpicks to hold the bacon in place if necessary.
​ Heat a skillet over medium-high heat with a little olive oil. Once hot, add the stuffed
chicken breasts and cook for about 2-3 minutes per side until the bacon is crispy and
the chicken is browned.
​ Transfer the chicken breasts to a baking dish and bake in the preheated oven for
about 20-25 minutes or until the chicken reaches an internal temperature of 165°F
(74°C).
​ Once the chicken is done, remove it from the oven and let it rest for a few minutes.
​ Serve the stuffed chicken breasts with a generous portion of the avocado salsa on
top. You can also add a side of steamed vegetables or a salad for a complete keto
meal.
