The Dartois Apple is a cake made with puff pastry, applesauce, diced apples, sugar, butter, flour, salt, and water. Apples are peeled, diced, and cooked to make a compote which is spread on one piece of dough along with raspberry jelly, leaving edges bare. Diced apples are arranged on top and sprinkled with sugar. A second piece of dough is placed over the filling and the edges are sealed and brushed with egg wash before baking for 30-35 minutes at 240°C then 200°C.
