Our Behind the scenes starts with Café 500. Along with Mary, Joyce,Morris,Chuck and I! Café 500 is 916 square feet packed 4 ovens, 2 stove tops, 1 freezer, 1 grill and 1 panini grill with 3 large and 2 small refrigerators. We have 5 store rooms.
My nursing degree trained me to be calm in a crisis and to be prepared for anything to happen. When a staff member doesn’t show up everyone has to work all the harder. When something goes wrong with an ingredient it has to be fixed sometimes starting all over. So I prepare to be ahead of schedule and hold things. I carry a bag now of all sorts of items in case something did not get onto the truck. I carry a hammer and screwdriver. Also, extra foil in case the grill needs to be covered. Crisis Management is when the tent goes down in a microburst….15 minutes prior to the reception! I remember last summer during horrendous rain storm, we were working ankle deep in water.
