In this ideal situation there are no herbicides, fungicides, pesticides or synthetic fertilizers. This is organic coffee at its finest. Forested coffee farms are bio-rich buffer zones for plants, flowers and wildlife that are at risk as a result of deforestation and poor land management. Ginger Coffee Recipe
Ingredients:
6 tablespoons ground organic coffee
1 tablespoon grated orange peel
1 tablespoon chopped crystallized ginger
½ tablespoon ground cinnamon
6 cups of water
Prepare:
Heat water to boiling
Combine coffee, orange peel, ginger and cinnamon and place in cloth filter over container
Pour slightly less than boiling temperature water over coffee grounds
Pour into mugs and garnish with cinnamon sticks, whipped cream and or more orange peel
This concoction is a taste treat. It is also good for you. Both ginger and organic coffee have a host of good effects on your health.

Black beans, where the interior of the bean is also more or less completely black depending on the severity of the attack, are beans having undergone a yeast fermentation starting at the epidermis; the surface of the bean is covered with minute holes surrounded by mineral micro crystals, left after enzymatic degradation of cellulose. The more serious the damage, the blacker is the interior of the bean.
Earthy Beans
The presence of 2-methylisoborneol, a secondary metabolite of Actinomycetes, Cyanobacteria and molds, has been associated with the earthy flavor of robusta coffee.
The levels present in robusta coffee are at least three times as high as in arabica (Vitzthum et al., 1990). These data indicate that robusta taste results, at least partially, from contamination by microorganisms rather than from specific aroma components.
Moldy Beans
A mould/yeast level above 105/g is always associated with mustiness in flavor. Geosmin, identified in a heavily rioy and musty tasting sample of Portorican coffee, is probably the substance responsible for moldiness in beans (Spadone et al., 1990).

For many folks there is a good cup of coffee, OK coffee, or bad coffee. In the world of true coffee lovers there is good coffee or exceptional coffee. And, for the true connoisseur there is gourmet coffee, either regular or one of the organic coffee brands. Although there is USDA certified organic coffee there is no agency that certifies gourmet coffee brands.

Old coffee is never gourmet coffee.

Although we like to promote Fair Trade coffees, being fairly traded is not an issue with gourmet coffees as they have a following and charge plenty for their coffee.

Coffee varieties are the subspecies of coffee that occur by natural selection and by selective breeding. Disease resistance, yield and flavor vary from variety to variety. Variety or breed selection is critical to the planter as he or she must pick the optimal variety for altitude, sun or shade, soil conditions and climate. Regarding coffee varieties here are a couple of terms:
Variety: A variety is a smaller group than a subspecies and a larger group than a form. A variety has most of the characteristics of the species but differs in specific ways.
Cultivar: This is a cultivated variety and is developed using agricultural breeding techniques. The coffee in your cup is most likely a cultivar. Two common cultivars are Bourbon and Typica.
Typica
Typica is an old coffee variety and the father of numerous sub-varieties. Typica came from Yemen. Dutch traders carried it to Malabar, India and later on to Indonesia. Subsequently Typica arrived at the French colony of Martinique in the West Indies. Natural selection and breeding have produced the following new varieties:

A constant threat to coffee production is an infestation by the coffee borer beetle. This insect burrows into the coffee bean and lays its eggs. The larva thrives by eating the bean after it hatches. The coffee borer beetle is not bothered by the caffeine in the coffee bean although caffeine is essentially poisonous to other beetles. Why is it that the coffee borer beetle thrives on caffeine? A recent article in National Geographic tells how with the help of bacteria the coffee borer beetle thrives on caffeine.
The beetle is the only animal that can feed solely on coffee beans. Others might occasionally nibble the seeds or other parts of the coffee plant, but they don’t dedicate themselves to the task. There’s a reason for that: caffeine. This stimulant draws many of us to coffee, but it effectively deters plant-eating animals. Not only does it taste bitter, but at the doses found in coffee seeds, it can poison and paralyze any wayward insect. Any insect, that is, except for the coffee berry borer. As a larva, it’s practically bathed in caffeine, and yet it survives. Even the most caffeine-rich beans fail to deter it.
Javier Ceja-Navarro from the Lawrence Berkeley National Laboratory has discovered its secret: it has bacteria in its guts that can detoxify caffeine.
Bacteria in its gut are the reason the coffee borer beetle thrives on caffeine. Dr. Ceja-Navarro treated the beetles with antibiotics and their protection against caffeine went away. The question is if organic coffee growers would want to treat their field with massive doses of antibiotics in order to combat the coffee borer beetle.
Dealing with the Coffee Borer Beetle
Because no one wants to go out and give a penicillin injection to every coffee borer beetle larva there must be other approaches to controlling infestations of the coffee borer beetle. Options for coffee borer beetle infestations include spraying with a fungus that is toxic to the beetle. Bassiana fungus is mixed with water, soap, oil and even fertilizers and sprayed on the soil as well as on the coffee beans. It tends to reduce infestations to the 2% range.

The Hawaiian coffee growers have appealed directly to a high placed native son for help as the coffee berry borer threatens the coffee crop in the islands. The Kona Coffee Farmers Association and the Hawaii Coffee Association have appealed to both President Barack Obama and Agriculture Secretary Thomas Vilsack for more help in defeating an insect pest that has the potential to destroy the Hawaiian coffee crop. The beetle in question was first spotted in Hawaii in 2010 has multiplied into the billions. There are slightly more than 800, mostly small, coffee farms in the islands and they produce a crop valued at $35 million a year. Kona organic coffee is imperiled as well as the rest of the coffee crop.

Healthy organic coffee has been around ever since coffee was discovered growing wild and ever since it was first grown. However, the history of organic coffee of the certified variety starts in 1990.
The Organic Foods Production Act was passed in 1990.
It requires the Secretary of Agriculture to establish a National List of Allowed and Prohibited Substances which identifies synthetic substances that may be used, and the nonsynthetic substances that cannot be used, in organic production and handling operations.
The reason that organic coffee certification as well as certification of other foods came into being is that farmers learned that they could increase production by using synthetic fertilizers, herbicides, insecticides, and fungicides. Because there was no clear way to differentiate between products grown by an organic method and those grown by more modern methods a need arose to certify food as organic. The law states that for coffee to be certified as organic the soil in which it is grown must be free from prohibited substances for at least three years and have been verified as such. There have to be clear boundaries between land on which organic coffee is grown and land where pesticides, herbicides, and prohibited chemical fertilizers are used. This is so that drift of substances from adjacent land will not contaminate the organic plot. Organic coffee certification requires a specific and verifiable plan for all practices and procedures from planting to crop maintenance, to harvest, de-husking, bagging, transport, roasting, packaging, and final transport. Procedures must be in place to insure that there is no contamination of healthy organic coffee with regular coffee produced on soil exposed to contaminants.
Who Does the Checking?
Once there was a set of regulations in place to certify organic coffee the problem was that aside from Hawaii no one grows organic coffee in the USA. And the USDA does not run around Latin America where three fourths of the organic coffee in the world is grown. Thus there are certifying authorities who act on behalf of the USDA. One of these is Bio Latina. These folks office in Lima, Peru but they tramp all over Latin America certifying various organic foods including coffee. One issue for small producers is that the $500 a year certifying fee is too steep a price unless they can get connected to a buyer who will pay the organic rate instead of the regular coffee rate.

For those of you who are looking for healthy organic coffee and are constantly befuddled by unclear labeling, here is a handy guide to organic coffee labeling. Ever since 2002 the United States Department of Agriculture (USDA) has had strict guidelines defining what constitutes organic coffee and any other organic food or drink. Another issue that we address in our guide to organic coffee labeling is that there are many great organic coffees such as some of the Colombian organic coffee brands that abide by different sets of standards such as UTZ and do not seek USDA organic coffee certification.
USDA Rules and Regulations for Organic Coffee
Organic coffee is a single ingredient food. As such coffee that qualifies as USDA organic coffee will have a USDA Organic label. When a food in general and specifically a coffee product has more than one ingredient you may see labeling such as 100% organic, organic, or made with organic ingredients. A constant threat to coffee production is an infestation by the coffee borer beetle. This insect burrows into the coffee bean and lays its eggs. The larva thrives by eating the bean after it hatches. The coffee borer beetle is not bothered by the caffeine in the coffee bean although caffeine is essentially poisonous to other beetles. Why is it that the coffee borer beetle thrives on caffeine? A recent article in National Geographic tells how with the help of bacteria the coffee borer beetle thrives on caffeine.
The beetle is the only animal that can feed solely on coffee beans. Others might occasionally nibble the seeds or other parts of the coffee plant, but they don’t dedicate themselves to the task. There’s a reason for that: caffeine. This stimulant draws many of us to coffee, but it effectively deters plant-eating animals. Not only does it taste bitter, but at the doses found in coffee seeds, it can poison and paralyze any wayward insect. Any insect, that is, except for the coffee berry borer. As a larva, it’s practically bathed in caffeine, and yet it survives. Even the most caffeine-rich beans fail to deter it.
Javier Ceja-Navarro from the Lawrence Berkeley National Laboratory has discovered its secret: it has bacteria in its guts that can detoxify caffeine.
Bacteria in its gut are the reason the coffee borer beetle thrives on caffeine. Dr. Ceja-Navarro treated the beetles with antibiotics and their protection against caffeine went away. The question is if organic coffee growers would want to treat their field with massive doses of antibiotics in order to combat the coffee borer beetle.
Dealing with the Coffee Borer Beetle
Because no one wants to go out and give a penicillin injection to every coffee borer beetle larva there must be other approaches to controlling infestations of the coffee borer beetle. Options for coffee borer beetle infestations include spraying with a fungus that is toxic to the beetle. Bassiana fungus is mixed with water, soap, oil and even fertilizers and sprayed on the soil as well as on the coffee beans. It tends to reduce infestations to the 2% range.

The Hawaiian coffee growers have appealed directly to a high placed native son for help as the coffee berry borer threatens the coffee crop in the islands. The Kona Coffee Farmers Association and the Hawaii Coffee Association have appealed to both President Barack Obama and Agriculture Secretary Thomas Vilsack for more help in defeating an insect pest that has the potential to destroy the Hawaiian coffee crop. The beetle in question was first spotted in Hawaii in 2010 has multiplied into the billions. There are slightly more than 800, mostly small, coffee farms in the islands and they produce a crop valued at $35 million a year. Kona organic coffee is imperiled as well as the rest of the coffee crop.

Healthy organic coffee has been around ever since coffee was discovered growing wild and ever since it was first grown. However, the history of organic coffee of the certified variety starts in 1990.
The Organic Foods Production Act was passed in 1990.
It requires the Secretary of Agriculture to establish a National List of Allowed and Prohibited Substances which identifies synthetic substances that may be used, and the nonsynthetic substances that cannot be used, in organic production and handling operations.
The reason that organic coffee certification as well as certification of other foods came into being is that farmers learned that they could increase production by using synthetic fertilizers, herbicides, insecticides, and fungicides. Because there was no clear way to differentiate between products grown by an organic method and those grown by more modern methods a need arose to certify food as organic. The law states that for coffee to be certified as organic the soil in which it is grown must be free from prohibited substances for at least three years and have been verified as such. There have to be clear boundaries between land on which organic coffee is grown and land where pesticides, herbicides, and prohibited chemical fertilizers are used. This is so that drift of substances from adjacent land will not contaminate the organic plot. Organic coffee certification requires a specific and verifiable plan for all practices and procedures from planting to crop maintenance, to harvest, de-husking, bagging, transport, roasting, packaging, and final transport. Procedures must be in place to insure that there is no contamination of healthy organic coffee with regular coffee produced on soil exposed to contaminants.
Who Does the Checking?
Once there was a set of regulations in place to certify organic coffee the problem was that aside from Hawaii no one grows organic coffee in the USA. And the USDA does not run around Latin America where three fourths of the organic coffee in the world is grown. Thus there are certifying authorities who act on behalf of the USDA. One of these is Bio Latina. These folks office in Lima, Peru but they tramp all over Latin America certifying various organic foods including coffee. One issue for small producers is that the $500 a year certifying fee is too steep a price unless they can get connected to a buyer who will pay the organic rate instead of the regular coffee rate.
Guide to Organic Coffee Labeling
For those of you who are looking for healthy organic coffee and are constantly befuddled by unclear labeling, here is a handy guide to organic coffee labeling. Ever since 2002 the United States Department of Agriculture (USDA) has had strict guidelines defining what constitutes organic coffee and any other organic food or drink. Another issue that we address in our guide to organic coffee labeling is that there are many great organic coffees such as some of the Colombian organic coffee brands that abide by different sets of standards such as UTZ and do not seek USDA organic coffee certification.
USDA Rules and Regulations for Organic Coffee
Organic coffee is a single ingredient food. As such coffee that qualifies as USDA organic coffee will have a USDA Organic label. When a food in general and specifically a coffee product has more than one ingredient you may see labeling such as 100% organic, organic, or made with organic ingredients. Only 100% organic coffee bears the USDA organic seal. Here is the breakdown:00% Organic (This means what it says. The package contains 100% organic products.)
• Organic (95% to 99% of this bag of coffee is organic.)
• Made with organic ingredients (This label means that 70% to 94% of the bag by weight is organic coffee.

In the coffee growing region of Colombia they grow varieties like Caturra at lower altitudes around 3,000 to 5,000 while Arabica grows best in the 5,000 feet and above range. Part of this is because of coffee leaf rust which thrives at lower altitudes. As temperatures have risen on the mountainsides of Colombia, Arabica is being planted higher and higher while left rust resistant Caturra replaces it in the low and middle altitudes. This problem is not limited to Colombia as climate change drives coffee farmers to higher elevations.
