Candida yeast naturally lives in the gut but is usually kept under control by beneficial bacteria. An imbalance of bacteria and yeast allows candida to grow out of control, potentially damaging the gut lining and spreading through the bloodstream. Candidiasis can cause a variety of health issues and lead to a weakened immune system. Treatment involves restoring bacterial balance through probiotics and following an anti-candida diet that avoids sugars and other foods candida thrives on. Many people have candida overgrowth without realizing it, and changing diet is important for treatment to be effective.
This document discusses COVID-19, including what it is, how it spreads, symptoms, treatment, prevention, and the role of nutrition. It notes that COVID-19 is a respiratory illness that spreads between people within 6 feet through droplets. Common symptoms include fever, cough and shortness of breath. While there is no vaccine, maintaining hand hygiene and social distancing can help prevent spread. A healthy, nutritious diet with fruits and vegetables is also recommended to support immune function.

How Many Cups of Coffee a Day
Scientific research tells us that drinking coffee lowers our risk of Type II Diabetes, various forms of cancer, the risk of depression and even suicide, as well as Parkinson’s and Alzheimer’s diseases. But, how many cups of coffee a day should you drink to get the maximum health benefit? And are there side effects to be concerned about? Let us start with coffee and reducing the risk of diabetes.
Coffee and Diabetes
We know that more regular or more organic coffee can lead to less diabetes. Drinking organic coffee reduces the incidence of Type II diabetes, the type that affects 95% of people with the disease. Researchers at UCLA have found what may be the reason. There is a protein called sex hormone-binding globulin. Its normal job is to regulate sex hormone activity in the human body. Researchers had suspected that the same hormone has an effect on the development of Type II diabetes. It turns out that drinking coffee increases the levels of sex hormone-binding globulin in the body. Women who drink at least four cups of coffee a day have less than half the incidence of Type II diabetes as women who do not drink coffee. The coffee drinkers all had elevated sex hormone-binding globulin levels while the non-coffee drinkers did not. The relationship was total between the elevated enzyme level and a reduced incidence of Type II diabetes. The bottom line of the UCLA study was that drinking 4 or more cups of coffee a day, with caffeine, reduces Type II diabetes incidence by 56%, more than half.

What Does Organic Mean?
Coffee is good for you and organic coffee is better. Regarding coffee, just what does organic mean? Here is a primer on healthy organic coffee.
Organic Coffee
Organic coffee is grown with the addition of artificial substances such as synthetic fertilizers, herbicides, insecticides or fungicides. Organic coffee is also processed and stored separate from other non-organic produce. To obtain organic coffee certification a grower must abide by several restrictions. Fertilizers must be one hundred percent organic. Such fertilizers include chicken manure, coffee pulp and general compost. Three fourths of all organic coffee is grown in Latin America.
Preserving the Environment
Organic agriculture can strengthen the natural environment's resistance to disease. Organic coffee is commonly shade-grown. This helps preserve forests and provides habitat for birds. Soil erosion is minimized and the water table is spared the polluting effects of synthetic fertilizers, herbicides, fungicides and insecticides. Insect populations are more balanced and less likely to case plant disease.
Organic Means Cleaner Coffee
A study by the Australian Food Standards Authority revealed that as many as 133 contaminants may be in a cup of commercially available coffee. These contaminants include metals such as aluminum and zinc, pesticide residues, ochratoxin A, acrylamide, furan, and polycyclic aromatic hydrocarbons. Some polycyclic aromatic hydrocarbons are found to cause cancer. Furans have been associated with skin disorders, liver problems, certain kinds of cancers, impairment to the reproductive, endocrine, and immune system, as well as effects on embryonic development. What does organic mean? It means a cleaner cup of coffee with no harmful additives.

Organic Coffee for Diabetics
One of the great health benefits of drinking coffee is that coffee reduces your chances of getting type II diabetes. But if you already have the disease how are regular or organic coffee for diabetics? Healthline.com has some very useful information about coffee’s effect on diabetes.
For people without diabetes, coffee may help reduce the risk of developing diabetes.
Caffeine has been shown in the short term to increase both glucose and insulin levels. Because of this, people with diabetes should be cautious when consuming coffee.
Once sweetener is added to coffee, it removes the benefits of diabetes prevention. It can actually increase your risk of developing diabetes.
It turns out that caffeine and antioxidants in coffee have different effects in regard to diabetes. Many but not all health benefits of drinking coffee come from the antioxidants. In the case of Type II diabetes prevention drinking coffee increases levels of sex hormone binding globulin which in turn is related to its effect in reducing diabetes incidence. However, caffeine has direct effects on insulin and blood sugar.
Coffee for Diabetics
Although drinking reduces your risk of getting Type II diabetes there may be problems if you already are diabetic. Caffeine with or before a meal causes a higher blood sugar. However there appears to be a protective effect with longer term coffee consumption as coffee’s effect on glucose and insulin sensitivity reduces with continual coffee drinking. Adding sugar to coffee dampens this effect to the detriment of diabetics. Diabetics who take good care of themselves routinely check their blood sugar. If a Type I or Type II diabetic is paying attention to their blood sugars and relating any changes to coffee consumption they may decide to cut out the coffee. Coffee consumption reduces your chances of getting Type II diabetes and continual coffee intake without sweeteners may be OK in diabetics. BUT drinking coffee is not how one controls diabetes. If you have this disease, go to see your doctor and follow his or her advice to the letter.

A problem in a coffee growing region like Colombia is that it is full or micro-climates because of the extent of its mountainous terrain. Thus sorting out effects of climate versus effects of local weather on coffee leaf rust can be difficult.

Coffee leaf rust is a fungal disease that affects coffee crops around the world. It is more prevalent at lower altitudes with higher temperatures, while higher altitudes with lower temperatures experience less infection. In Colombia, with its mountainous terrain and many microclimates, it can be difficult to separate the effects of climate from local weather conditions on coffee leaf rust. A study of the 2008-2011 outbreak in Colombia found it was likely driven by short term weather factors rather than long term climate changes. Farmers can help prevent coffee leaf rust by removing residue that encourages fungal growth and applying copper-based fungicides before infections occur.

Organic Coffee Side Effects, 1: Better Quality Coffee
Your organic coffee is almost always Arabica organic coffee.
There are two basic species of coffee, Arabica and Robusta. Arabica coffee is generally believed to be the first type of coffee to be cultivated with a tradition stretching back over a thousand years. When you buy Arabica organic coffee you are choosing the species of coffee with superior taste.
Arabica has less caffeine than Robusta, the other basic coffee type. But Arabica has more complex flavor and aroma and is the ingredient of most gourmet coffees. So, when you choose organic coffee for whatever purpose, the side effects are better aroma and better taste.
Organic Coffee Side Effects, 2: Health Benefits
Coffee has many health benefits. And most of those benefits come from the antioxidants found in green coffee and also those formed during roasting. Higher quality coffee such as organic coffee typically has more antioxidants and therefore more health benefits.

The UTZ certification for coffee aims to promote sustainable farming practices, environmental protection, and better opportunities and living conditions for farmers and their families. The UTZ program works directly with coffee farmers to educate them on techniques like reducing soil erosion and chemical usage, protecting water sources, and ensuring worker safety. While UTZ certification does not guarantee the coffee is organic, many organic farmers also pursue the UTZ certification due to its wider benefits and support for farmers. The certification involves traceability from farm to roaster to provide assurance to consumers.

Shade Grown Coffee Benefits
Organic coffee is a better choice than regular coffee. This is because organic coffee has all of the benefits of coffee and none of the impurities than can be found in a regular cup or java. And shade grown coffee is often a better choice than plain organic. Why is this? What are the shade grown coffee benefits that convince us to buy shade grown instead of organic or regular coffee?

Sustainable agriculture
Preservation of biodiversity
Soil preservation as a priority
Commitment to responsible land management
Shade Grown Coffee Benefits 1: Shade grown is gourmet coffee
A couple of years ago we wrote about gourmet coffee and what that means.
In general gourmet coffee is characterized by high quality beans and skillful preparation. In the world of coffee many consider Jamaican Blue Mountain, Kona from Hawaii, select organic coffees from Panama and Arabic coffee from Colombia as being of high gourmet quality. But there is more to the story.
Growing coffee in the shade results in a finer coffee. This is similar to growing coffee at higher altitudes. The beans mature more slowly and with deeper and richer flavor.
Shade Grown Coffee Benefits 2: Sustainable Agriculture
The ideal way to grow coffee in the shade is to plant coffee within an existing forest. Mother Nature takes care of the rest. In this ideal situation there are no herbicides, fungicides, pesticides or synthetic fertilizers. This is organic coffee at its finest.
Forested coffee farms are bio-rich buffer zones for plants, flowers and wildlife that are at risk as a result of deforestation and poor land management. Planting coffee under the existing forest canopy results in a high quality coffee. And income from selling the shade grown coffee helps the farmer keep the land in its original pristine condition.
Without having to resort to the use of synthetic fertilizers or other chemicals the natural plants are all preserved. And the water table is not polluted. Sustainable agriculture is one of the best shade grown coffee benefits.

2. We have noted time and again the many
significant health advantages of drinking
coffee. Coffee drinkers have reduced
incidence of various types of cancer, type II
diabetes, Alzheimer’s and Parkinson’s
disease, and more. The many healthy
antioxidants in coffee reduce inflammation as
well.
3. Now we have been dealing with a global
pandemic and the question arises for coffee
drinkers if the morning cup of Java helps.
Does coffee prevent Covid? According to a
study published by researchers at
Northwestern University coffee may help you
avoid this bad disease.
5. According to researchers at Northwestern
University both coffee and vegetables help
reduce the chance of getting Covid-19. They
note that good nutrition plays a strong part in
keeping the immune system healthy. While
being a coffee drinker does not protect you
from ever getting Covid there is a 10%
reduction in one’s risk of getting the disease
if a person drinks a cup of coffee a day.
6. The same risk improvement is seen with eating
vegetables two days out of three.
Unfortunately, eating processed meats every
day takes away much of the benefit. Thus, if
you want to cut down on your risk of getting
Covid by 10% having a cup of coffee with your
salad is a positive choice for your health. The
researchers are looking into whether this
benefit is specific to Covid or something that
occurs with all respiratory diseases.
9. Cutting down on your risk of getting Covid by
eating a salad and drinking a cup of coffee
each day is a bonus. However, none of what
the folks at Northwestern say indicates that
you should not wear a mask when near
strangers or get your Covid vaccinations. The
fact is that avoidance of the germ or
immunization against the germ are your best
courses of action in regard to Covid-19.
10. However, wearing a mask or getting your Covid
shots do not help you avoid getting Type II
diabetes like drinking coffee does. Neither
does wearing a mask or getting vaccinated
cut down on your risk of colon cancer,
endometrial cancer, stroke, or falling asleep
at the wheel when driving at night. Coffee has
many benefits on top of which is a ten
percent reduction in the risk of getting
Covid-19.
12. One of the public health concerns as the Covid
pandemic wears on is that the virus finds
ways to mutate and render some vaccines
less effective. The nice part about drinking
coffee is that coffee (and vegetables) jazz up
your immune system which will help protect
you against any germ that comes your way,
even a newer version of the coronavirus.
13. What can wear off is the power of the
antioxidants in coffee if the coffee becomes
stale with time and exposure to air. Thus,
your best bet for strong antioxidants is to
buy whole bean coffee, green or roasted,
store properly, and grind just enough for the
day before brewing.
