Introduction
 Before Chris Bruno purchased Fiddler’s Restaurant (which
later would become Chris’s American Restaurant) in
Brookfield, Connecticut, the location had housed
everything from a hotdog stand to a speakeasy. The name
change to Chris’s American Restaurant in 2003 reflected
not only a change in menu but a significant remodel,
including doubling the parking lot size.
Renovation and remodeling are good ways to keep a
restaurant looking fresh and bringing in customers, but
when considering a remodel, staying within budget is also
key.
Limit the scope of the remodel, if possible.
Restaurant Remodeling
 As tempting as it may be to replace all of the kitchen
appliances, focus primarily on the things customers will
notice—lighting, flooring, coloring, and outside design—
to really make an impact on cash flow. This will keep the
remodel from getting out of hand, and it can provide an
opportunity to cement or tweak an existing style.
Whether focusing on exterior remodeling to show
potential customers that the style of the restaurant has
changed or completing interior remodeling to give existing
customers a new experience, knowing precisely why the
remodel is taking place is important. If the remodel is
being conducted in response to customer feedback or to
signal a shift in the restaurant’s style, the customer’s
perception of the new look can make a big difference.
