White Chicken Chili
                                                    Serves 8. Serving size 1.5 cups

Ingredients
2 tsp olive oil
2 lbs. chicken breast, skinless
1 small onion, chopped
2 cloves garlic
4 cups water
4 bouillon cubes (low sodium if available)
2, 16 oz. cans Great Northern Beans
1, 10 oz. can Rotel (diced tomatoes) with green chilies
                                                            1         6” x 4” paper
                                                            1 1/4     Good, old-fashioned

Cut chicken into cubes and heat in a non-stick pan with olive oil.
Add onions and garlic, cook till tender
Add Rotel, water, bullion, and beans to chicken mixture
Place entire mixture in crock pot and simmer for several hours.

Pair with 5 whole wheat crackers and a piece of fruit.
