1. White Chicken Chili
Serves 8. Serving size 1.5 cups
Ingredients
2 tsp olive oil
2 lbs. chicken breast, skinless
1 small onion, chopped
2 cloves garlic
4 cups water
4 bouillon cubes (low sodium if available)
2, 16 oz. cans Great Northern Beans
1, 10 oz. can Rotel (diced tomatoes) with green chilies
1 6” x 4” paper
1 1/4 Good, old-fashioned

Cut chicken into cubes and heat in a non-stick pan with olive oil.
Add onions and garlic, cook till tender
Add Rotel, water, bullion, and beans to chicken mixture
Place entire mixture in crock pot and simmer for several hours.
Pair with 5 whole wheat crackers and a piece of fruit.
