- 2. Our first vintage of Barrel Reserve – 2014 Bottled in 2021 On the table in 2023 Decanting red wines will help them open up when you serve them. We enjoy some spectacular sunrises and sunsets around the vineyard.

- 4. Wines are bench tested and sampled before final blending and bottling. We ship wine to 37 states and inside Oklahoma
- 5. Estate wines are grown, produced and bottled at the winery Estate Cabernet Sauvignon 2022 Estate Merlot 2017 Estate Chambourcin 2017 Estate Rosé 2017 from Chambourcin
- 6. We love to cook and pair our wines with food
- 7. Steak & Cab Dinner Steaks were prepared “sous vide” and then briefly grilled before plating. Everyone eats well and meet new friends dining in the cellar

- 9. Revenge of a leaking hose A winemaker favorite is our Estate Rosé made from Tempranillo grapes. More food and Pecan Creek wine. Here is some experimental bubbly Vignoles.
- 10. A private old wine affair Four unopened French, German, and California wines were donated by friends. Vintages from 1954 to 1962. All white. The plan was to open the wines and see if they were still good. A dozen friends attended We knew the old wine had not been stored properly.
- 11. The Verdict YECCHHH – It was all terribly oxidized. White wines oxidized to a tan or brown color as the 60- year-old corks disintegrated and allowed oxygen into the bottle.
- 12. Wine Packaging We often package wine in 1.5 Liter (same volume as 2 bottles) pouches for people going to the river and lake. We also package wine in 20 Liter kegs for use at events and sales to bars, restaurants and breweries. Our Just Peachy wine is sold in kegs to two breweries where it is the 3rd largest selling tap

- 16. 5K Run In 2024, we will have the 5K run in the morning on the same day as our annual Grape Stomp in the afternoon. Come for the run. Stay for the fun!

- 19. Peerless Pears We grow some of our pears and Harvest the rest
- 20. Harvest Measurements Squish the sample grapes in a plastic bag to get the juice. Then measure the sugar and acid levels
- 21. Always Experimenting We make small batches of experimental techniques. These sample batches guide the next year’s processing. Below is whole- cluster press on the left and native ferment Vignoles on the right. We use AST – Ascorbic acid (Vitamin C), Sulfites, and oak Tannins to lower our overall sulfite addition by 66%

- 23. Do you know what’s in your wine? From the vineyard to the bottle, we track everything. Grapes are crushed and pumped into bins for fermentation. We add yeast and sometimes nothing else but a little sulfite before bottling.
- 24. Dry ice and winemaking Dry ice is solid CO2. When pressing white grapes, we add it to the grapes to keep them cool and to keep air (oxygen) out of the grapes when crushed and pressed. We add it to the pressed juice before it is pumped into a tank.
- 25. What is this? It’s an “Ooga Horn” The original Klaxon horns on Model-T Fords were motor driven. This model is probably from the 1950s and is entirely electric, and uses 12 Volts. We found this horn in the new building the winery purchased on the north end of our property. We cleaned it up, rewired it, and voila’ it works.

- 31. Christmas Party We do private parties for individuals and businesses. In this party, we provided dinner, wine, and entertainment – a winery murder-mystery event. Everyone loved it.
