Nutrition
Meat, Poultry
Chinese Food Quantity Recommend
• 50~80% Grains : corn, barley, millet, oats, rice,
wheat
• 30~40% Cooked vegetables : Carrots, potatoes,
fennel, beans, cabbage etc
• 5% Meat : beef, lamb, poultry, fish
• 5% Raw foods, salads, fruit : small portion of the
overall diet; more during the Summer
• Only small amounts of liquid during meals
• If Excess --- ST digestive fire (long term)

• S/S : Strong person, loud powerful voice, red
tongue, thick coating (yellow or white) – avoid
meat, no meat for 4-6 weeks, increase grains,
fruit and vegetables
• S/S : Weak person, weak, quiet voice, often
tired and exhausted, pale, swollen tongue,
weak pulse – beef, chicken, pork,

• S/S : Heat sign, red tongue, rapid pulse, red
face, reddened eyes, nervousness – no meat
for 4~6 weeks, increase grains, fruit, and
vegetables
• S/S : Cold sign, pale, swollen tongue, weak,
slow pulse, shivering, aversion to cold,
worsens condition and pain – lamb, chicken,
beef

• S/S : Dampness, swellings, edema, chronic
phlegm disorders (frontal sinusitis,
bronchitis)– avoid meat, no meat for 4~6
weeks, increase drying grains
• S/S : Dryness, dry mouth, lips and skin,

vegetables

Beef
• Nature/Taste : warm and sweet
• Action:
• 1. tonify Qi and blood
• 2. strengthen SP & ST
• 3. dispel dampness
• 4.relieve edema
• 5. strengthens bones and tendons
Beef
• Condition: edema, abdominal distention and
fullness, weak back and knees, deficient ST &
SP
• Contraindications: Not to be used with any
type of skin lesions, Hepatitis, or any type of
kidney inflammation

kwashiorkor
• Protein Deficiency 

Beef Folk remedies
• 1. Deficiencies of blood, Qi, SP : take cooked
ground beef and soak it in hot water for 10
minutes ; drink the juice
• 2. Edema or chronic diarrhea : stew beef in
water for 2 hours ; drink the liquid

Chicken
• Nature / Taste : warm and sweet
• Action:
• 1. tonify Qi
• 2. Nourishes blood
• 3. aids Kidney deficiency
• 4. benefits SP & ST
Chicken
• Condition : postpartum weakeness, weakness in
old people, cold-type arthritis, weakness after
illness or blood loss
• Contraindications : Do not eat Chickens that are
force fed chemical pellets and injected with
steroids and antibiotics.
• Heat type of cancer  Leukemia (if Yin def heat
s/s)
• Heat symptom : red tongue, fever, extreme thirst

Chicken Folk remedies
• 1. weakness or anemia : cook 1 chicken with 1
ounce Dang Gui, and 6 ½ cup of water.
• Simmer together for 1 hour. The darker meat
birds such as the Chinese black chicken are the
most tonifying
Chicken Egg
• Nature / Taste : cool and sweet
• Actions
• 1. nourish Yin
• 2. tonify blood
• 3. stabilize hyperactive fetus
• 4. lubricate dryness

Chicken Egg
• Conditions : Dry cough, hoarse voice,
dysentery, blood and Yin deficiency,
hyperactive fetus, lubricates dryness
• Contraindications : Do not eat too many eggs.
Do not eat eggs fried or raw.
Folk Remedies
• 1. Yin and Blood deficiency – steam the eggs
• 2. Postpartum – eat eggs with green onions
• 3. Pain of dysentery – cook eggs with rice
vinegar
• 4. Hyperactive fetus – eat a hard boiled egg
daily

Fish diet therapy
• S/S : Excess, strong person, loud powerful

Octopus
• S/S : Deficiency, weak person, weak quiet
voice, often tired and exhausted, pale, swollen
tongue, weak pulse – eel, sardines, mussels,
oysters

(parasites) , always cook fish with garlic, ginger
or onion to neutralize the potential toxins

• Ocean fish : warmer than freshwater fish

• Conditions : Kidney deficiency causing back
pain, impotence, cold conditions, deficiency
conditions, postpartum blood loss, lack of
milk, leukorrhea
• Contraindications : generally not consumed in
Summer, not to be consumed in edema,
malaria, common cold, toothache or any type
of heat conditions
Lamb folk remedies
• Anemia, weakness, blood deficiency : cook
lamb with ginger and Dang Gui
• + Dang Gui, Jujube date, astragalus, ginger,
scallion, or ginseng for problems of weakenss
and coldness

• 1. moistens and nourishes organs

• Conditions : internal dryness, constipation,

overweight people, those with deficient SP
and ST, hypertension, stroke patients or those
with diarrhea
