Noah & I
1. A short time ago we made dinner plans for Al Dente’s.
I am writing to reflect on our outstanding experience and the level of service we received from your staff.
I need to first share some information about my grandson, Noah (he was our entire focus in selecting to
dine at Al Dente’s);
My grandson you see has multiple challenges; he is legally blind, hearing impaired, has cerebrally palsy
along with severe food allergies, just to name a few.
Upon realizing that we were going to be attending “The Voice” (Noah loves all music), I needed to see if
there was a restaurant at Foxwoods that would understand the degree of Noah’s food allergies in
question and secondarily be accommodating to his specific needs?
I called Al Dente a week before we were planning to be on site and spoke with Chef David at length about
Noah’s allergenic needs.
Chef David assured me that he would do whatever it takes to make sure that Noah’s meal would be made
to his liking. One of Noah’s favorite foods is pasta. We know that the only challenge we need to focus in
on is cross contamination and the preparation of a very plan pasta sauce needed to meet Noah’s
requirements.
Upon arrival for dinner – I mentioned our reservation and immediately the host stated that they were
expecting us and that the Chef would be out to say hi.
After being seated Chef David came out to greet us and went out of his way to connect with Noah -
question him on what he wanted for dinner, which foods he likes and the show he was seeing.
When Chef David completed the pasta sauce, he personally brought out a small bowl of sauce for Noah
to sample - to make sure he was OK with the flavoring.
While dinning Chef David came out yet again, to make sure that Noah was OK and wanted to see if he
needed some more pasta.
At the conclusion of our meal Chief David came back to speak with everyone - Noah in particular and
presented Noah with a Chef’s hat that he personally signed.
Chef David went well out of his way to make sure that Noah had a GREAT dinning experience and it was
clear that he was not just going through the motions.
