Capacity is a measure of an organization’s ability to provide customers with the demanded services or goods in the amount requested and in a timely manner. Capacity is also the maximum rate of production. An organization marketing and
selling rotisserie chicken should be able to produce and deliver chicken in sufficient quan-
tities to satisfy consumer demand during lunch and dinner times when demand peaks.
Meeting customer demand requires the acquisition of physical facilities, the hiring and
training of qualified people, and the acquisition of materials to achieve the desired pro-
duction level. The following important questions about capacity planning are addressed
in this chapter:
• How can management estimate capacity?
• What is system capacity, and why is it important?
• How can capacity decisions be made to gain a competitive advantage for the
organization?
Role of Capacity Planning
Capacity planning is very important because significant capital is usually required to
build the facilities and purchase the equipment to build capacity. Creating a series of large
server farms to support the Internet and data communications requires substantial invest-
ment. Millions of dollars are required to build a brewery, a hospital, or a knitting produc-
tion line to make sweaters. These expenditures are for fixed assets that are expensive to
maintain and even more expensive to change. Capacity decisions require careful consid-
eration of an organization’s long-term objectives and the market demand. Capacity deci-
sions must be consistent with current and anticipated demand.
Organizations should be flexible in order to meet future as well as present capacity require-
ments. Flexibility can allow managers to:
• Adjust production volume to respond to changes in customer demand.
• Produce different products on the same equipment (product mix) to respond to
changing customer needs.
• Alter product technology and process technology to maintain or improve an

This project is development of new business suggested and established from American Farmers Association as a partnership with one of the largest food organization in the middle East named Carrefour, Mr. Gorge Stuard the Head of Investment and development Sector in the organization , the one who will be responsible for following up funding provided by his organization required to execute the project. The Product will be directly under supervision from USFDA, to be sure for the safety of the Milk product before doing any sale to the consumer in the local market. The main idea of the project is to buy the milk from farmers and collected and stored it large frediges tanks dedicated for this purpose to maintain the validity of the milk for long as possible around four weeks. The milk before storage will go through a process to purified from any impurities after filtering and treatment of any harmful bacteria. Next step is to be packaged and sold in the local market under a trade name called Golden Milk. This profitable project distributes profits as follows:
1- 70% to the investor Carrefour Organization which is fully given the funds to execute the project.
2- 30% of the profits to the American Farmers Association in return providing the land on an area of 5,000 M2, they will responsible to do agreement with farmers to buy the milk from them on behalf of CMCC, in addition the Administration and full management of the Milk Collection & Processing Center furthermore, providing technical expertise, manpower and specialized team in marketing for the product . Also, they have to follow up all the necessary procedures inquired to take approvals from government authorities to approve the project execution and the commercial name of the milk product.
The project aims to build milk processing machines that will process the milk collected from different farmers to add value and packages it before selling it to retail shops and supermarket. Through processing, which adds value, the shelf life and prices of milk increases, and this help in profit maximization. The project will be particularly helpful and significant to the smallholder dairy producers because it will be collecting milk from them before processing. tion line to make sweaters. These expenditures are for fixed assets that are expensive to

This project is development of new business suggested and established from American Farmers Association as a partnership with one of the largest food organization in the middle East named Carrefour, Mr. Gorge Stuard the Head of Investment and development Sector in the organization , the one who will be responsible for following up funding provided by his organization required to execute the project. The Product will be directly under supervision from USFDA, to be sure for the safety of the Milk product before doing any sale to the consumer in the local market. The main idea of the project is to buy the milk from farmers and collected and stored it large frediges tanks dedicated for this purpose to maintain the validity of the milk for long as possible around four weeks. The milk before storage will go through a process to purified from any impurities after filtering and treatment of any harmful bacteria. Next step is to be packaged and sold in the local market under a trade name called Golden Milk. This profitable project distributes profits as follows:
1- 70% to the investor Carrefour Organization which is fully given the funds to execute the project.
2- 30% of the profits to the American Farmers Association in return providing the land on an area of 5,000 M2, they will responsible to do agreement with farmers to buy the milk from them on behalf of CMCC, in addition the Administration and full management of the Milk Collection & Processing Center furthermore, providing technical expertise, manpower and specialized team in marketing for the product . Also, they have to follow up all the necessary procedures inquired to take approvals from government authorities to approve the project execution and the commercial name of the milk product.
The project aims to build milk processing machines that will process the milk collected from different farmers to add value and packages it before selling it to retail shops and supermarket. Through processing, which adds value, the shelf life and prices of milk increases, and this help in profit maximization. The project will be particularly helpful and significant to the smallholder dairy producers because it will be collecting milk from them before processing. Milk Pasteurizer _ Case Study
- 1. Electrical Energy Consumption Using a surface Fitting model Case Study Milk Pasteurizer
- 2. This study aims to show that a simplified surface fitting model used for determining the energy consumption during pasteurizing milk by Pasteurizer in a dairy plant. The study reveals that milk volume and the temperature gradient between the room and the final milk temperature can effectively be used for predicting the energy consumption within 95%. The objective of this study is to provide resources and methods to reduce energy use and energy related costs in dairy processing facilities. Purpose Objective

- 4. The room temperature of the plant where the Pasteurizer is placed was measured using a TMC6-HE temperature sensor, connected to a Hobo UX120-006M four-channel analog data logger which was configured to log at one- minute intervals. The electrical energy consumed by the Pasteurizer was measured using a Landis and Gyr E650 meter while the volume of milk was extracted from the records of the plant. Methodology
- 5. Findings The results showed that the developed model is able to figure out the electrical energy consumption of the Pasteurizer within an acceptable accuracy since 80% of the variation in the electrical energy consumption by the Pasteurizer was explained by the mathematical model. Also, milk volume and the temperature gradient between the room and the final milk temperature in the Pasteurizer are primary and secondary contributors, respectively, to electrical energy consumption by the Pasteurizer. Based on the system that has been monitored the findings reveal that the Pasteurizer was operating within the expected efficiency level as assumed by the optimized electrical energy consumption (EEC) closely mirroring the modelled EEC with a determination coefficient of 0.95.
- 6. Limitations Implications Originality Only one system was monitored in this case study. The milk blending temperatures, effects of the insulation of the Pasteurizer, were not taken into account in this study. The developed model is simple to use, cost effective and can be applied in real-time on the dairy farm which will enable the farmer to quickly identify an increase in the heating energy per unit of milk heated. The developed easy-to-use model can be used in dairy plants on similar Pasteurizer; hence, they can devise ways to manage their energy consumption in the plant during the heating of milk and foster some energy efficiency initiatives. The implementation of the developed model can be useful to dairy plants. The maintenance of the Pasteurizer can be determined and scheduled accordingly through energy optimization.
