Cabernet Sauvignon is a late-ripening grape variety known for its high tannins, color, and acidity. It tends to retain high levels of IBMP, which can impart "vegetal" characters, in cool, damp conditions. For the highest quality red wines, environmental conditions should induce moderate vine vigor through water deficit or low nitrogen to reach full ripeness by the end of the growing season. Cabernet Sauvignon and blending varieties each have different climate and site requirements to achieve balance and complexity.
