Henry Chavez started Lydia's Specialty Fruits in 2007 after seeing much produce shipped out of his region only to be processed and shipped back. The company occupies a 24,000 square foot facility with state-of-the-art equipment to peel, cut, core and slice fruits and vegetables. Lydia's has food safety programs like HACCP and Good Manufacturing Practices in place and receives third-party audits to ensure safety. The facility intakes raw materials and puts them through a 15-step process including washing, testing, cutting, packaging and labeling before products are palletized and shipped.
