2. ARROMATIC PLANTS
 Arromatic palnts are plants that possess aromatic compounds, most of
which are essential oils which are volatile in room temperature.
 These compounds are synthesized and stored in a special structure
called gland located in different parts like leaves , flowers , fruits etc .

3. These essential oils can be extracted by various methods like physical
and chemical for example
 Solvent extraction
 Steam distillation
 Enfleurage
 Solvent extraction
 These plants are mainly being used in
• Fragrances
• Flavouring agents
Also being used as raw material
• Cosmetics
• botanical pesticides
• Pharmaceuticals etc

4.  These are mainly used for the extraction of essenetial oils and then these
oils are being used in different purposes
 There are almost 400 species of aromatic plants ( from 67 plant families )
from which essential oils are produced on a large commercial scales.
Among these some important families of these palnts are as follow
• Asteraceae
• Lamiaceae
• Apiaceae
• Zingiberaceae
• Rubiaceae

5.  In past , they have been used in
• Traditional medicine
• Food preparation and preservation for example citrus limon ,thymus
vulgaris etc.
• Cosmetic purposes for example aloe vera is being used in most beauty
soaps , lotions and creams

6. UTILIZATION OF AROMATIC PLANTS
Arromatic plants can be dividid into following groups on the base of their
use
1 As raw material
They are being used as raw material for the extraction of essential oils .
Extraction of essential oils is the major use of aromatic plants.
2 As spices
For this purpose mainly non-leafy parts are used for example cardamom
, clove , carom seeds , cinnamon , coriander seed

In this group of aromatic plants the flowering parts or leafy parts are
used as flavoring or seasoning
4. Miscellaneous Groups
this group of aromatic plants is mainly used in medicines , cosmetics ,
dyes , air fresheners , disinfectants , botanical pesticides

4. Mentha piperita(peppermint)……………….essential oil extracted from
menthe piperita used as antioxidant .
5. Syzygium aromaticum (clove)…………..best expectorant , antioxidant
