Before planting mesclun, the soil is fertilized, tilled, and raked. The beds are 42 inches wide with 4 rows of drip tape laid 10.5 inches apart, allowing for 8 rows of mesclun. Proper watering is critical for germination - the seed is watered in and drip irrigation runs for 48-72 hours to prevent drying. A variety of greens like lettuce, kale, tatsoi, and arugula are planted to add color, texture and taste to the mix. The greens are harvested by hand and placed in a spinner to be washed and dried before bagging.
