What is Food Safety?
Food Safety is a scientific discipline describing handling, preparation
and storage of food in ways that prevent foodborne illness.
Five key principles (WHO):
1.Prevent contaminating food with pathogens spreading from people, pets and pests
2.Separate raw and cooked foods to prevent contaminating the cooked foods
3.Cook foods for the appropriate length of time at the appropriate temperature to kill pathogens
4.Store foods at the proper temperature
5.Always use safe water and safe raw materials

Technology is an accepted part of modern culture Advances and acceptance of technology means that culture change is happening. Now is the time to move forward with how we all manage and monitor our compliance The prevalence of technology in our industry has expanded the opportunities for sharing of knowledge and data So much to learn from each other which is being enable by the speed and efficiency of today’s technology
  • #5 These are areas that you will all be overtly familiar with – it is now regarded as the common sense elements of what we all do with food handling and safety. The issue with food safety is not the understanding of the facts, it is the culture of managing it that has failed to evolve much since the food hygiene regulations 2006 came into place, let alone since the 1990 Food Safety Act. Many people feel that ‘elf n safety’ has gone too far but they fail to understand that while there are some bureaucrats out their who just want more and more paper checks filled in, while they may not necessarily be practical and their can be a lot of feeling that management are just trying to catch them out, the methods they are suggesting are right to help businesses, particularly multi-site ones – they just need more effective implementation. Large corporates and multi-site businesses spend tens of thousands of pounds on policy development and implementation but as the following 2 case studies show…
  • #6 You will all no doubt be aware of the Railway Tavern incident – this has been a landmark case in food safety and its management in large companies. Dr Lisa Ackerley (Managing Director of Hygiene Audit Systems, Professorial Fellow of the RSPH, visiting Professor of Environmental Health at Salford University) commented that the custodial sentences for the manager and chef, 18 months and 12 respectively, show that the falsification of records, documents and statements will not be tolerated by the courts.
  • #7 The outbreak at Heartlands Hospital in Bordesley Green, between 25 May and 18 June 2014, saw 32 staff and patients infected. The outbreak was traced to contaminated eggs produced in Bavaria, Germany. Prof Eric Bolton's report found inadequately equipped wards, unmonitored food preparation, and poor cleaning helped it spread. Key finding: the investigation found that salmonella was discovered on a food trolley left outside a toilet, and that cleaning staff, supplied by G4S used the same uniforms to clean the wards and serve the food to patients (BBC, 3 June 2015)

As an industry, we need to be doing more to prevent these incidents to happen – we have information from the past 25 years to inform and guide our accountability and decision making It is time to stop being reactive and only looking at these fundamentally key issues once a tragedy or major incident has occurred – by forward planning and investing the time to look at your food safety systems and processes in advance you can not only save yourself money in the long-term, but we can stop these incidents from happening
