Gallo pinto is one of Costa Rica's most traditional dishes consisting of rice and beans served with bread and eggs. The name literally translates to "spotted rooster" and while its origins are unknown, Nicaraguans claim to have introduced it to Costa Rica. To make gallo pinto, onions and bell peppers are sautéed with beans and spices like cumin and bay leaves are added, then cooked rice is mixed in before serving topped with fried eggs on bread.
