Food Safety Systems: Introduction In Chile there are two governmental services in charge of the food safety. SAG (Agriculture and Livestock Service)
Introduction SEREMI (Regional Ministry of Health) Main differences  SAG  SEREMI Only Slaughterhouses with  Slaughterhouses for national  destination to exportation.  consumption and other places that prepared food.
Laws and Regulations in  food safety There are a lot of laws and regulations focused in food safety and they are the basis of our decisions as inspectors.  Some of these laws in my country are: Agriculture and Livestock Service Organic Law Certify aptitude for human consumption of farming and agriculture products with destination to exportation. The meat law and its regulations This law approach all the clasification, tipification, transportation of the meat and also the animal welfare.
Laws and Regulations in  food safety Decree N°61 This regulation is focused in the infrastructure and operation of slaughterhouses, cold storage chambers and cut up plants.  These three regulations were created by the Chilean’s  Deparment of Agriculture. Food Sanitary Regulation This decree establish the sanitary conditions that must have the production, imported, packaging, sale of food that will be intended for human consumption.
Laws and Regulations in  food safety Norm N°62 This rule is about the Veterinarian Inspection of livestock and its meat in Slaugtherhouses. (judging the aptitude for human consumption). Norm N°54 About the Veterinarian Inspection of poultry in Slaugtherhouse. These three regulations were created by the Chilean’s Health Ministry.
Laws and Regulations in  food safety All of these regulations are used at the same time, so with all of them we can be able to certify the food safety.
Strenght of the Service Great respect of the food Companies to the Official Service. There exist commitments of the companies to obey all the regulations that the official Service establish. Efficient and complete HACCP Verification of the companies.  All the Agriculture and Livestock Service staff which works in Slaughterhouses are capable to check out all the critical control points of the food production process that the company establish.
Strenght of the Service Official Service follows very strict the regulations.  Due to this, people trust in the food safety of our country.
Weaknesses of the Service Lack of faster methods in microbiology analysis. Results after taking microbiology tests are slow (Ex: Salmonella sp). Information between the Official Service and Food companies is bureaucratic.  Sometimes the information pass through a lot of people, so is not very clear.
Areas for improvement In Chile there is a problem that has not been solved. This issue is due to there exist two Official Services in charge of the food safety. One is SAG that depends of the Department of Agriculture and the other one is SEREMI which depends of the Health Ministry.
Areas for improvement The problem is show up when the responsibility is share in some topics and sometimes they have different solutions. Another trouble appear when one Service does not want to take care of a topic and give the responsibility to the other. VS
