Eggs as Snacks
                                                                    Rather than reaching for a bag of
                                                                     chips, why not consider an egg-based
                                                                     snack and get more than a good
                                                                     share of protein and nutrients
                                                                     compared to just empty calories
                                                                     from fat and sodium.

                                                                    There are a variety of snack options
                                                                    which can be made from eggs. In
                                                                    fact, a hardboiled egg or two eaten
                                                                    with a pinch of salt is a great and
                                                                    convenient energy giving food when
                                                                   you’re on the go. If that doesn’t
                                                                 seem too substantial, then chop it up
                                                               with some celery and onion; season with
a little salt and paprika; and mix in some mayonnaise and/or sour cream and you have a great egg salad
sandwich filling perfect with a crusty baguette or crackers.

Leftover eggs from breakfast can be used as an ingredient for another dish. Just make sure to store
them right away in the refrigerator to prevent spoilage. Combine it left over scrambled or hardboiled
eggs with some mayonnaise, chopped meat (also leftovers) and you have a great sandwich or croquette
filling.

Along the busy streets of many Asian cities, eggs in different forms, colors and flavors are sold by street
vendors at very reasonable prices. Tea eggs are a popular Chinese snacks sold not only in China but in
the respective China towns of big cities and countries. Quail and chicken eggs battered and deep fried
are sold in the Philippines and served with spiced vinegar.

In South East Asia, balut or cooked fertilized duck embryo
boiled and eaten out of the shell is a popular snack item
that has already taken the West by storm. It’s now
available in bottled “gourmet-style” with olive oil, spices
and seasoning. Some would venture to say it has
aphrodisiac qualities thereby piquing people interest in
this very nutritious but rather alien looking delicacy.
Apart from just eating it with some salt or spiced vinegar,
countries like Vietnam, Laos and Cambodia eat as a
match for beer drinking session.
