The Beginnings
Paul was a lawyer approaching retirement, and Jolanta a teacher working in a bank.
They met in 2008, and by 2009 had decided to build a new life together.
In 2010 they started renovating two tumble down properties in a privileged location in
Gevrey Chambertin, Burgundy. One of them was an ancient winery belonging to the
Faiveley family, and the other a Maison de Maitre occupied by Faiveley and earlier the
Regnier Family. The orginal wine press dating from 1863 was found on the property,
which has been renovated, and re instated. Around the press there are vintage charts
for 100 years of Gevrey vintages from 1863 to 1963. Beneath the property are ancient
vaulted wine cellars.
Location
Gevrey Chambertin
An ancient wine producing commune, which can trace its viticultural history back to the
Romans. With over 600 hectares of vines, 27 Premier Cru and 9 Grand Cru wines, it is the
largest and best known wine producing commune in Burgundy.
On the Route des Grands Crus, 12 km south of Dijon, in the heart of the Grands Crus vineyards
of Burgundy.
By Train
Dijon is 1.5 hours from Paris Gare de Lyon by TGV. With an early flight from Heathrow or
Gatwick to Paris CDG, or the 07.01 TGV from St Pancras, it is possible to leave London at 07.00

‘Half Way House’
Driving from Calais to the south of France, Gevrey Chambertin is approximately half way, and
an ideal ‘Half Way House’ stop-over.
Ski Stop
Driving from Calais to the Alps, with an early morning departure from Les Deux Chevres, the
slopes are easily accessible to get the benefit of half a day’s skiing. Similarly on the return
trip, leaving an Alpine ski resort at lunchtime, means an additional morning’s skiing, leaving a
day’s travel back to the UK.

A meticulous 4 year renovation of an ancient winery and a large village Maison de Maitre, has
created 11 large luxurious en suite bedrooms, the majority with views over the surrounding
vineyards. Decorated with original artwork and antiques.

The cellars of Les Deux Chevres are stocked with wines from some of the best producers in
the village, and represent an ideal opportunity to fill the car with duty free wine en route way
back to the UK.
Dijon Market
Dijon is the capital of Burgundy, and has one of the best markets in central France. Produce
comes to the market from all over France (even Corsica). An increasing number of the stalls
sell their own biodynamic produce, fresh from the earth the day before. Other attractions
include the Musee des Beaux Arts housed in the former palace of the Dukes of Burgundy, an
attractive shopping centre, including an antique quarter, and a selection of excellent
restaurants serving local produce.
Beaune
The second most visited city in France. The main attraction is the association with the wine,
and the Hospices de Beaune.
