CHINESE CUISINE
China covers a large territory and has many
nationalities. Hence, there is a wide variety of
Chinese foods, each with quite different but
fantastic and mouth watering flavours.
Chinese choose chopsticks as their tableware
rather than a knife and fork. Chinese people
consider a knife and fork to represent a sort of
violence, and to resemble cold weapons.
LOCAL SPICES
Scallions, fresh ginger, root garlic or chilli
pepper; with the use of wine, aniseed, cinnamon,
peppercorn or sesame oil are used a lot in
Chinese cookery. Soy sauce, sugar, vinegar and
other seasonings may used to give a desired

COOKING
All chefs of Chinese kitchens, professional or in

taste, texture, so that each individual dish has
it's unique features highlighted; contrasted and
balanced.
