COLOURSCOLOURSCOLOURSCOLOURSCOLOURSCOLOURSCOLO
Colour in manufactured food is paramount for consumer acceptance. Consumers expect aroma and
flavour to resemble the natural colour of the food as found in nature. Some manufactured products
have associated colour by inheritance for example margarines have inherited the yellow tint of butter.
Colours like blue and black are sometimes added for its unconventional value in the confectionery
industry.
Natural colour is one from a natural source, minimally processed to achieve a stable product in
a suitable form for further food manufacturing.
Natural sources from which colour pigments can be harvested include vegetables, minerals or animal
sources. These raw materials are processed into water soluble, oil soluble and powder forms which can
be used by the manufacturer.
NATURE’S FOOD COLOURS
Turmeric, the pigment is known as curcumin and
the colour it yields is yellow to greenish yellow.
Perform well in baked goods, ice-cream and con-
fectionery.
Paprika pigment from the Capsicum annum
pepper yields the orange-red colour well suited
for savoury applications.
Lutein is extracted from marigold flowers, the
colour pigment (carotenoid) yields a warm
yellow to orange/red colour.
Annatto from a South American shrub yields a
range of colour hues from light yellow to deep
blood orange.
Carmine (Cochineal) is from a small beetle that
feeds on cacti and yields a bright red hue.
Anthocyanins occurring in grape skin, purple
carrot, purple sweet potato and more can solve
the red hue sought after in many beverage
applications.
Chlorophyll pigment is present in all green
plants. The extracts are mostly derived from
spinach, nettle and grasses.
CARAMEL COLOUR
Caramel colour is the most popular food colour. The
colour is mostly derived from heating wheat or sugar
beet carbohydrates. These colours are labelled
E150a,b,c or d (additive) number according to their
synthesis.
Caramelised sugar used for colouring purposes and
specially suited to baked goods, breakfast cereals,
dessert toppings, sauces, seasonings, coffee drinks,
confectionery products, and pet foods.
WE HAVE ALL YOUR CARAMEL NEEDS
